What are some quick, cheap and delicious recipes for a poor college kid?

I need to make some food for myself and I'm bored of the usual mac and cheese, pizza, ramen noodles and microwaveable crap....HELP!What are some quick, cheap and delicious recipes for a poor college kid?
You can bake potatoes or sweet potatoes in the microwave. Just put it on ';Bake.'; Just do not put any foil in there with the potatoes.





There are also Buitoni pastas. You just boil them up, and they already have cheese inside them and stuff.





You can buy jars of premade spagetti and alfredo sauce. That's pretty cheap. And of course, you would have to buy some bags of pasta with it. (You just boil the pasta, open the jar, and pour it on the noodles.) If you want to be a bit healthier, while the water is boiling you can throw some frozen veggies in the microwave and mix it into the pasta when it is done.





Obvious choices would include soup, sandwiches, and salad. But fresh food is probably more expensive. (Since you have to use fresh foods to make soup, sandwiches, and salad.) You could make soup out of leftovers, I guess. But that would mean stuff like leftover chicken and vegetables. A college student probably can't even afford to eat chicken or vegetables to have for leftovers.





I eat mac and cheese a lot, but since you are bored with it, you could always add stuff to it. Like put in leftover meats or frozen vegetables so that it will not taste so boring.





I also recommend rice, which is pretty cheap and a bag can last a long time. You can pretty much do anything with rice. What I do is fry the rice up with some scrambled eggs and vegetables. It is really quick. (Since the vegetables are frozen in a bag.)What are some quick, cheap and delicious recipes for a poor college kid?
You need something nutritious but cheap? OK, I don't know exactly how much this will cost but it is yummy and will cost less than eating out. Try chicken stir fry. Cut 2 raw chicken breasts into bite size pieces. Pour 2 TBS oil in frying pan and brown chicken. I usually just cook un til all pink is gone. Add the following: (you may use all of these or just some of them depending on your taste) sliced carrots, sliced onion, chopped green pepper, chopped celery, broccoli sliced or broken into Little florets, cauliflower(prepare the same as broccoli) 1 pkg ram-en noodles, 1 sm can water chestnuts drained, 1 T cornstarch, 2 tsp soy sauce, sprinkle of garlic salt, packet of seasoning from ramen noodles, cashews or peanuts, optional, 1 cup water. After brown chicken add 2 cups of veggies from the list above. Crush ramen noodles and add to the poot. { MIx soy sauce, seasongs, cornstarch and water together.} I usually double the ingredients between thebrackets. and pour on top of everything. Put your heat on medium and cook until veggies are tender crisp. Enjoy with some soy sauce on the side! This heats up really well.
Black beans and Rice, very balanced and high protein. You can freeze the leftovers in zip loc freezer bags and nuke them as needed for a quick dinner while you are studying.





EASY CUBAN BLACK BEANS %26amp; RICE


RICE: Make about 4 c. rice.. Usual recipe is 1 c. rice to 2 c. water, 1/2 t. salt. Bring to boil, stir, turn down to simmer. Cover and cook for about 20 minutes.


Or... use instant rice. Follow directions on box. Tastes just as good and is easy.





BEANS: In large skillet, saute a medium chopped onion with about 1 lb of sausage. I use the regular breakfast sausage in a plastic tube or you can use chorizo, whatever is cheaper. When the sausage is no longer pink and the onion is tender, add 2 cans black beans. Put about 1/2 can of water into each of the bean cans and scrape out all of the beans. Add the water to the skillet.


Bring to high, stirring. Turn down to simmer, cover and cook about 15 minutes while rice is cooking. Be sure to stir it often to keep from sticking.





When done, mix the bean mixture with the rice and enjoy with a little salsa.


If you have company or are trying to impress someone, spoon the rice around the edges of a platter and pour the beans in the middle. Garnish with salsa. Makes a great presentation.





I often serve this as a company dinner, it is cheap, easy, and impressive.





IF there are any leftovers, put into individiual zip loc freezer bags, flatten and stack in the freezer. When you want a quick and easy meal, take out a bag, poke a few holes in it, and nuke for a couple of minutes.
Here are a couple of recipes for shepherd's pie. It's not expensive to make and a hearty meal.





I don't know if you have an oven available, but here is the recipe for it.





Easy Shepherds Pie





1 can corn, drained


1 can green beans, drained


1 jar beef gravy


1 lb ground beef


1 container of already cooked mashed potatoes (Bob Evans, Yoders...no instant)


1 pack of shredded cheddar cheese


2 cloves of garlic, minced


1/2 bar of cream cheese





Brown hamburger with 1 clove of garlic, then drain on a paper towel. While this is browning, I heat the potatoes according to the instructions.





Mix corn, green beans and gravy with meat.





Mix 1/2 package (1 cup) of cheese, 1 clove of garlic minced, and cream cheese with the potatoes.





Put meat mixture in the pan then layer the potatoes on top. Top with the remaining package of cheese.





Bake in a preheated oven at 375 for 20 minutes or until cheese is bubbly and melted.

Here is a microwave recipe. I have never tried it, but it sounds like it will work.





MICROWAVE SHEPHERD'S PIE





Prepare time: 5 minutes, cooking time: about 18 minutes. Serves 4. 1 tbsp. butter 1 c. thinly sliced carrots 1/2 c. chopped onion 1 (10 3/4 oz.) can condensed beefy mushroom soup 3 c. hot mashed potatoes 1/4 c. shredded Cheddar cheese Chopped fresh parsley





Crumble beef into 2 quart microwave-safe casserole. Cover. Microwave on high 5 minutes or until beef is no longer pink. Stir once during cooking to break up the meat. Drain, transfer beef to bowl.





In same casserole, combine butter, carrots and onion. Cover. Microwave on high 5 minutes or until vegetables are tender-crisp. Stir once during cooking. Stir in soup and reserved beef.





Cover and microwave on high 5 minutes or until bubbling, stirring once during cooking. Using a pastry bag, pipe potatoes around edge of casserole (or spoon). Sprinkle with cheese. Microwave, uncovered, on high 3 minutes or until cheese is melted. Garnish with chopped fresh parsley, if desired.
Back when I went to college, my roommates and I were in the same situation! We used to buy those pre cooked chicken patties and mix them in with the Ramen to make it more exciting! I remember those days.


Spaghetti is easy to prepare and cheap. Just cook the pasta according to package directions. Either buy a can of sauce (usually costs $1) or a jar of sauce (little more expensive). Heat the sauce in another pot. Once the pasta is drained, mix in the sauce.





Tacos are easy too. Just a package of ground beef or turkey, a packet of taco seasoning and some tortillas or shells.





Good luck to you and hang in there. It does get better!

On aluminum foil, place potatoes, onion, placed cut side down, %26amp; sausage. Sprinkle spices over potatoes. Turn aluminum foil up to make a package. Pinch sides of foil together so liquid doesn't seep out. Bake at 425 for 1 hour. The sausage may split open when it's done cooking.





Serve with dijon mustard. May place in a cored pepper for presentations sake.








*Can also use raw sausage links





Creamy Potatoes 'N' Kielbasa


1 pkg frozen potatoes (I used cubed raw potatoes)


1 lb kielbasa sausage, cubed


1 can cream of chicken soup, undiluted


1 C. shredded cheddar


1/2 C. water





In slow cooker combine all ingredients. Cover and cook on low 6-8 hours. **Do not overcook - will turn to mush**





4-6 servings





Kielbasa recipe


2 peppers, chopped


1 onion, chopped


Kielbasa, chopped, cut at a slant, the more meat that is shown the better


1 C rice


28oz canned tomatoes (DO NOT DRAIN)





Stir all together.


Bake at 300-350F for 2 hours.





May need more water though, check at half hour intervals.





To serve, place scoop on a plate %26amp; add a dab of butter.

5 Nice sized Potatoes uou can add more if ya like cut ino small cubes


1 ring smoked sausage





add the sausage and potatoes and cook em in water and u can add some parsley


that is it nice and easy cook the taters untill they are fork done


Green Bean Stuff


2 big cans of Allens flat green beans


2 pkgs of turkey polish sausage


1 big red onion cut jullian style


1 jar roasted red bell pepper


2Tbls dill weed


1/3 c extra virgin olive oil


salt %26amp; pepper to taste








Combine all ingredients in your crock pot set on low and walk away will be perfect in about 4 hours.
Green Lentil Soup with Lemon





2 cups green lentils, washed


3 teaspoons olive oil


6 cups vegetable stock


1 bay leaf


2 large onions, chopped


3 cloves garlic, crushed


2 teaspoons coriander


2 teaspoons cumin


1/2 teaspoon sweet Hungarian paprika


2 large carrots, diced


2 tablespoons lemon juice, or to taste


salt and pepper





Heat oil in pot %26amp; add lentils, stir briefly %26amp; add the onions %26amp; garlic. Cook for 3 or 4 minutes, stirring constantly.





Add the bay leaf %26amp; spices %26amp; stir for 1 minute.





Finally add the carrot. Pour in stock, raise heat %26amp; bring to a boil.





Simmer for 60 minutes until the lentils start to puree. Remove from heat %26amp; let cool. Blend till smooth %26amp; return to the pot.





Add lemon juice %26amp; salt %26amp; pepper. If too thick, thin with a little more stock.

U.S. Senate Bean Soup





Serves 6.





1 lb. dried navy beans, picked over, soaked in water to cover overnight, and drained


1 large ham hock


8 cups water


2 medium-size yellow onions, minced


3 medium-size baking potatoes, peeled and cubed


6 ribs of celery, including some leaves, finely chopped


1/2 cup chopped fresh flat-leaf parsley


1/4 tsp. freshly ground black pepper, or to taste


Salt, to taste





1. Put the drained beans and ham hock in the slow cooker and cover with fresh cold water. Cover and cook on High for 1 hour.





2. Drain, taking care not to splash yourself with the hot water, and add the 8 cups of water. Add the onions, potatoes, celery, and half the parsley. Cover, turn the cooker to Low and cook for 8 to 10 hours.





3. Stir in the remaining parsley and the pepper, season with salt, cover, and continue to cook on Low 15 minutes longer.





4. Remove the ham hock, returning any bits of meat left on the bone to the soup; discard the bone. Ladle into soup bowls and serve hot with garlic bread.

Bisquick Cornbread





1¼ cups Bisquick (or other brand baking mix)


1¼ cups yellow cornmeal


2 eggs


1½ cup milk





Whisk Bisquick and cornmeal together. Whisk milk and egg together. Fold the the two mixtures together; lumpy batter is OK. Bake in greased black iron skillet at 400ºF for 20 minutes.

Vicksburg Cornbread





2 Tbsp. bacon drippings


1 cup A/P flour


1 cup yellow cornmeal


1 Tbsp. baking powder


1 tsp. salt


1 cup milk


1 large egg


5 oz. Gouda cheese, cut into small cubes, optional**


¼ cup finely chopped green onions, optional





Place bacon drippings into a 10” cast iron skillet, tilting to coat. Preheat skillet in a 375ºF oven for 10 min.





Combine flour and rest of dry ingredients in a bowl. Combine milk and egg, stirring well. Add milk and eggs to dry mixture, stirring just until dry ingredients are moistened. Stir in cheese and onions, if desired. (Omit cheese when making cornbread for dressing.)





Pour hot drippings from skillet into batter; stir until blended. Add batter to hot skillet, spreading evenly.





Bake 20 minutes at 375ºF. Immediately invert cornbread pone onto dinner plate and serve. Yield: 8 servings.

Macho Nachos


As a main course or snack, macho nachos are always great.





1/2 lb. ground beef


1 large bag tortilla chips


1 cup cheese - sliced or grated


Toppings - olives, tomatoes, green peppers, chopped onions


Dips - hot sauce, guacamole, sour cream





Brown ground beef and drain off fat.


Spread tortilla chips over tin foil.


Spread cooked meat over chips, then add other ingredients.


Add cheese to the top. Bake in oven at 350 for about 10 min.


When cheese melts, nachos are ready to eat.


Use hot sauce, sour cream or guacamole or dipping.





Chicken Saute


An easy ';one pot'; meal.





2 chicken breasts (white meat works best)


Spices (pepper, garlic, oregano)


1/4 cup sliced onions


1/8 cup white wine


1/4 cup chicken boullion


Butter





Cut chicken into bite size pieces.


Cook chicken over a medium flame in a frying pan with a little butter, onions and spices.


After chicken is browned add some white wine and clear chicken soup (chicken bouillon).


Cook about 5 minutes more and then add the vegetables.


The vegetables will cook with the chicken and the whole thing will be ready in another 5 minutes.








Cajun-Style Chicken Nuggets (microwave)





Highly seasoned chicken chunks, coated with cumin, chili powder and thyme, cook quickly for your convenience.





1 package dry onion soup mix


1/2 cup dry bread crumbs


1 1/2 teaspoons chili powder


1 teaspoon ground cumin


1 teaspoon crushed dried thyme


1/4 teaspoon cayenne pepper


2 pounds fresh boneless, skinless chicken breasts, cut into 1-inch-wide strips


3 tablespoons vegetable oil





In large bowl combine dry onion soup mix, dry bread crumbs, chili powder, cumin, thyme and cayenne pepper.


Dip chicken in bread crumb mixture, coating well.


Arrange in a microwave-safe dish; drizzle with oil.


Cook in microwave uncovered on HIGH for 6 to 10 minutes, or until done. Drain on paper towels.





Chili %26amp; Rice Wraps





1 28oz can Chili


1/2 cup Water


1 cup Minute Rice


6 Flour tortillas


Cheddar cheese—shredded


Tomatoes—chopped


Green Onions—sliced





In a large sauce pan, bring chili and water to a boil.


Stir in minute rice, cover and cook on low heat for 5 minutes.


Spoon chili mixture into tortillas.


Top with cheese, tomatoes and onions as desired.





So you are probably thinking that you do not have the money for steak and lobster, yet you will want to fix your own meals that actually taste good.








English Muffin Pizza


An easy snack, these little pizzas can be topped with any leftover vegetables or meats. Quick and light dinner.





Preparation time: 15 mins


Cooking time: 10 mins


Serving Size: 6





Ingredients


6 English muffins, split in half


14 ounces pizza sauce


12 ounces pepperoni, sliced


2 cups shredded mozzarella cheese


1 can (2.25-oz.) sliced black olives, drained





Directions


Preheat oven to 400°F.


Line a baking pan or baking sheet with aluminum foil.


Arrange muffin halves in baking pan and spread 2 to 3 tablespoons pizza sauce on each.


Cover with pepperoni slices.


Sprinkle with mozzarella cheese and olives.


Bake for 10 minutes or until cheese is bubbly.


Serve hot.





Feel free to add your favorite pizza toppings such as mushrooms, sausage, onion, anchovies, spinach, you name it!





* Hot Cereals: You can purchase instant hot cereals such as oatmeal and cream of wheat. All you need to do is boil water and within minutes you have a healthy breakfast.





* Grilled Cheese: Bread and cheese is cheap and if you put it together you can fix yourself a grilled cheese sandwich.





* Eggs: You can scramble eggs on a griddle and add a side of toast.





* Pasta: If you have your own apartment then go ahead and boil up some pasta and top it with your favorite sauce. You will have a perfectly healthy meal balanced with vegetables and protein, yet it only took you minutes to make. Pasta is also very cheap so a quick pasta meal can cost you less than $10.





* Burgers: Purchase the pre-made hamburger or turkey patties. You can throw them on your foreman grill and in a few minutes you can have great tasting burgers.
