My roommate is a ';medium'; picky eater; she doesn't like mushrooms, tomatoes, cucumber, olives, etc but will still try most things. She also doesn't really like to cook, and because I do I usually end up being the one making dinner. I'm having trouble coming up with new (cost effective - we're in university!) things to make that she will eat, that are healthy, and aren't too boring. She loves pesto, but I am getting so sick of pesto!!
any suggestions?

I have two small kids that are pretty picky, and I must admit, so am I..but we are on a budget (single 25 yr old mom!) and we made all of these last week.
Italian chicken. ( I got a pack of 7 chicken legs for $3) Get a ziploc baggie and pour italian dressing all over chicken, let it sit at least an hour. Bake in oven @ 350 degrees for about 1 1/2 hours. Comes out so juicy %26amp; moist. I do a box of velveeta shells. All together this will cost like $6 bucks tops!
Tacos! $3 for a lb. of ground chuck, season it well, brown it.
Crispy shells $1. Add your fave toppings, cheese, salsa, lettuce..etc. Really cheap and filling.
Pizza Pasta. This one is amazing! You have to try this at least once!
Get penne pasta and jarred spaghetti sauce [[I get the garden vegetable flavor]] and first boil the penne pasta according to package. Next drain and put into a casserole dish, pour about half the sauce on top of it. Sprinkle mozzarella cheese on that, next add a layer of pepperoni, next a layer of black olives and mushrooms to your 1/2 of the dish (since she is a picky eater!) next add the remaining sauce on top and top with more cheese. Bake for 15 minutes or just long enough to heat the sauce and get the cheese melted and omg..You have a wonderful EASY meal. I garnish with parmesan cheese. So good, I promise. This will cost approx $7-8 but you will have some leftovers, and it is better the next day, I promise.
We also have a frito pie night every week, but it's not healthy :(
We also do grilled ham %26amp; cheese sandwiches and a cup of tomato soup. You have a more acquired taste, so you can make grilled ham, nice cheese, maybe add sliced avocado and pair it with a cup of tomato soup topped with lo-cal sour cream...while roommate can have grilled ham %26amp; cheese and a cup of chicken noodle soup :)Simple and cheap recipes for picky eaters?
Try this, it's very delicious and easy to make;
Fettuccini Carbonara
5 teaspoons olive oil
4 shallots, diced
1 large onion, cut into thin strips
1 pound bacon, cut into strips
1 clove garlic, chopped
1 (16 ounce) package fettuccini pasta
3 egg yolks
1 cup heavy cream
3/4 cup shredded Parmesan cheese
salt and pepper to taste
1.Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.
2.Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.
3.In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.
Serves 6.

try tuna melt you take a hambergur bun and make the tune you usaly would(mayo, oinoins, galiuce) and put that on one side, then you toast the other one with chedar cheese on it, when melted put together and enjoy
try cheft salads put anything you want in it, meat vegies, fruit, chips, crackers, croutons
hambergurs( in the broilers you just take foil papper, and put the meat on it, and broil it on low for about 10-15 min. and make you bun and eat

Go get a box of Stove Top Stuffing (Chicken has the recipe, but I suppose any flavor will do) Follow the first recipe on the back. We do this a lot. It's cheap and has great flavor!! Also, check out foodnetwork.com They have lots of great ideas!
