Good ideas for cheap but appealing recipes?

I love to cook and my family is used to having nice meals a lot. But, my hubby lost his job last week, and we really need to tighten our belts and save money, especially on our grocery bill. I'd like to still make appealing things, and not depress the crew further with cheap looking or tasting food.


Does anyone have a favorite budget recipe they can share? I feed 2 adults and a sixteen year old girl.

When you're on a tight budget, try to shop for at least a week at a time. Things to buy and freeze: ground beef (for burgers %26amp; meatloaf); chicken breasts; pork chops; fish (tilapia is cheap and good); spinach or wheat pasta; jar of pasta sauce; frozen meatballs (really good and can be added to canned pasta sauce after they are microwaved); whole-grain or brown instant rice; couscous; canned corn and peas; frozen broccoli, spinach, and brussel sprouts. You'll need to buy lettuce, tomatoes, cucumbers, etc., for salads So now, put these items together in appealing ways. For example, a meal could consist of pork chops, corn, and spinach with a cucumber %26amp; tomato salad. Or another meal could be fish, brussel sprouts and rice; and another could be spaghetti and meatballs with bread %26amp; salad; another, meatloaf, couscous and peas. I always try to have a protein, starch %26amp; vegetable. These are just simple foods, but served with a smile, they become elevated to gourmet. or you can go out to eat at a nice resturant that doesnt have high prices.
Fried rice is cheap...a little meat goes a long way.
