Delicious, but cheap family recipes?

I love to make big, fancy meals, but I am on a very tight budget. I am looking for somewhat easy, but delicious recipes that I can prepare on a tight budget. My husband is somewhat picky, but he does love potatoes, turkey, pizza/italian stuff, he dislikes most veggies...hope that helps a little, but any recipes would be greatly appreciated!Delicious, but cheap family recipes?

Shepherd's Pie

Lasagna


1 lb lean ground beef


1 (20 ounce) can pasta sauce


1 lb curly pasta (or your favorite shape, whole grain adds a nice taste)


1 egg


1 1/2 cups fat-free cottage cheese


1/2 lb grated cheese


Brown meat in a skillet. Drain fat from meat (I usually rinse it under warm water.). Meanwhile, boil noodles according to package directions (its OK if they're a little underdone.). Meanwhile mix the egg and cottage cheese in a bowl, and set aside. Spray a 9x13 pyrex. Coat the bottom with a very thin layer of pasta sauce. Layer about half of the noodles on top of the sauce. Layer the meat on top of that, followed by another thin layer of sauce. Layer the cottage cheese mixture on top of that, followed by the remaining noodles. Add the remaining sauce on top of the noodles (I prefer it thin on top, so that the noodles get crispy-chewy.) Sprinkle all of the cheese on top of the lasagna. Bake at 350 for 20-30 minutes depending on how crunchy you like your noodles. I have found that half of a container of cottage cheese is perfect, so I usually go ahead and mix the remaining half with an egg, and freeze it. It defrosts quite easily in the fridge next time.


I also usually buy the meat on sale in bulk, and freeze it in pre-cooked portions. If you do that, you can easily put this meal together quickly. It's also easy to make 2 lasagnas at once, and freeze one for later. You can reheat it in the microwave, or in the oven at 350 for 20 minutes, covered.





Stroganoff


1 lb hamburger


1 dash garlic salt


8 ounces egg noodles


2 (12 ounce) cans tomato juice


1 1/2 teaspoons Worcestershire sauce


In a 10-inch skillet with lid, brown hamburger and add garlic salt. Poor noodles on top. Do not mix. Mix sauce and tomato juice; pour over noodles. Cover and simmer until noodles are soft, about 30 minutes. After noodles are soft, stir and remove from heat. Serve hot.

ITALIAN MUFFALETTA





1 sm. jar olive oil


1 lg. salad olives


2 tsp. oregano


4 cloves garlic, minced


1 tsp. parsley





Mix all above ingredients (don't drain olives). Let set.





Po-boy (French) bread


Ham


Hard salami


Swiss cheese


Shredded lettuce





Slice bread. Spoon sauce mixture on bread. Top with cheese, ham, salami and lettuce.





HUNGARIAN GOULASH





Take equal amounts of boneless chuck and onions for this recipe. Example:





2 1/2 lb. meat


2 1/2 lb. onions


Salt, pepper (to taste)


Hungarian sweet paprika (do not substitute)





Cut meat into bite-size pieces and brown in garlic flavored oil. Add onion slices to the meat. Cover and COOK UNTIL THE ONIONS COMPLETELY DISAPPEAR!


Add salt and pepper, then add the Hungarian sweet paprika until the mixture takes on a reddish color. Thickness of the goulash is adjusted by adding water. Serve with poppy seed noodles.
for dessert, make crescent rolls into cone shapes and fill with chocolate pudding or pumpkin/cool whip filling and top with powdered sugar
You can make many cassaroles,





1Tuna ( I make this by boiling egg noodles (1 - 1 1/2 #) then add 1 can cream of whatever soup, and 1/2 can of milk (water works) then add 2 small cans of tuna (drained and rinsed to get the disgusting can taste out) then pour into greased baking dish, top with cheese, bake @325 10- 15 untill melted and bubbly.





2 you can make meat and potatoes, by browning meat, add seasoning (2-3 T of taco seasoning plus you can doctor it up) and add chopped potatoes. then cover with water (potatoes and meat) add onion (1/2 med.) and you should be good to go!!! This is a mexican dish that is used when you are on a tight budget.
The other day it was simple i took a nice bun and placed warm turkey on it and poured gravy over it to make open face turkey sandwiches for dinner it was delish!!


i have taken ground beef and mushroom gravy (you can use any kind) and then layer it with taters and corn if he eats that i layer it will veggies and have mashed potatos on top and brown in oven...its good.
Saute veggies you husband does like (onions, carrots, peas, celery, broccoli, corn- maybe) in a pan until just tender. Remove and saute diced or strips of chicken, if desired. In a bowl mix 1 can of campbells healthy request cream of chicken soup, 1 can of water (stir together) and add veggies (and meat) and 1 box of stovetop stuffing (wheat, prefered). Transfer to a casserole dish coated in cooking spray. Bake according to instructions for casseroles on box.





The cheapest meals, though are simple: chicken, salmon (buy frozen, its more expensive than chicken, but less expensive than beef), baked, a veggie, and maybe cooked rice, or slice of whole grain bread and butter. Serve with a glass of skim milk. Make sure your kids get veggies, even if Dad doesn't. If you're going to serve pasta, try those made with whole grains (more expensive than regular, but cheaper than most meals). Mix it up by baking 1/2 cooked ziti, sauce with part-skim mozzerella (faux lasagna). Stir in diced tomatoes to sauce for extra tomato-power.
On kraft.com they have weekly menus. There are a lot of good ideas on there, some meals are under $5 to prepare.

1 lb ground meat (beef, turkey, or whatever you like)


1 small yellow onion, finely minced


1-2 cloves garlic, finely minced


1 lb short pasta like macaroni or farfalle (do not use long pasta like spaghetti)


1 jar of your favorite spaghetti sauce (substitute tomato juice of plain tomato sauce if you like)


8 oz cheddar cheese (substitute colby if you like)


freshly grated parmesan to taste





Cook the pasta according to package directions and your own preference. Brown the meat with the onion and garlic. Drain and discard the liquid. Stir the spaghetti sauce into the meat, and simmer till the pasta is done and drained. Combine the pasta, cheese, and meat sauce. Top with parmesan. Serve with a salad.





Remember, if you use turkey or chicken, you need to season the meat more than if you use beef. You can substitute other cheeses, different shapes of pasta, and different tomato products to get slight variations. I do not recommend using a long pasta or a stringy cheese because it becomes too messy.

Take a package of Boneless Skinless Ckn Breast Rinse them.


Pat dry.


Season them w/ what ever you like (I use salt, pepper, garlic pwd, onion pwd, %26amp; poultry seasoning)


Set aside


Take I cup of regular long grain rice. Mix w/1 can of fat free cream of mushroom soup %26amp; 1 can of water or chicken stock. (I mix the soup %26amp; stock 1st then add the rice.) Put in a greased pyrex dish. Cover with aluminum foil.


Bake @350 for 1 hour.


Take it out 1/2 way through %26amp; stir.

Ingredients.


One box of spice cake


One of the small cans of pumpkin





Directions.


preheat oven to 375 deg.


mix the pumpkin with the cake mix with NOTHING ELSE.


(it will have a thick lumpy consistency)


Fill muffin wrappers (sprayed with Pam) with the mix about 3/4 full


Put in oven for approx 15 minutes


(depending on how full the cups are is how long they cook)





They will honestly look really gross but they are so good and only have about 145 calories per muffin!

Stir-fry is good. Chicken breast (preferably purchased boned and on sale. Remove the bones, and you've saved yourself a lot of money!), Pasta with hand made pasta sauce (easily done with a food processor/magic bullet thing), lean beef broiled with garlic and pepper. Ingredients must be inexpensive. I can get pasta or ground turkey/ground beef for cheap.





The youth group I lead is meeting on Thursday evening for one hour, and we are all going to make and take home a meal to stick in the freezer until Sunday so their moms don't have to cook on Mother's Day.

NAVY MINCED BEEF (SOS)





2 pounds ground beef


1 large onion, chopped


3 tablespoons flour


2 28 oz cans tomatoes, crushed


1/8 teaspoon ground mace, nutmeg, or cloves


1/3 teaspoon salt


1/2 teaspoon garlic powder


1/8 teaspoon pepper





Saute beef and onions until beef browns slightly.


Stir, breaking apart. Drain excess fat.





Sprinkle flour over beef. Add remaining ingredients and combine well.





Simmer an additional 10 to 15 minutes.

spaghetti or lasagna either one-- you can cook each like you were going to severe it, and then freeze it and reheat-- you may need to add additional sauce or cheese on sunday, but both are easy and cheap to make





for lasagna:


ground turkey or beef


get oven ready noodles (don't get the kind you have to boil)


spaghetti sauce


ricotta cheese


shredded pizza style cheese (or mozarella)


and most importantly a foil pan!!

spread some sauce on bottom of pan.... lay one layer of noodles meat, ricotta, and more sauce-- then another layer of noodles meat, ricotta, and suace-- you can continue to do that until you have run out of ricotta-- the last layer is noodles, meat, sauce, and then top with the shredded cheese--- bake at 350 or so until cheese has melted and starts to brown on the edges-- then freeze and reheat on sunday
I like Sheperd's Pie, and it has all your basic food groups in it; plus it takes about 20-30 minutes to make.





For a 9 x 13 pan, brown 1 lb. ground beef or turkey (I use ground turkey usually) with a small chopped onion and garlic clove.





After it is cooked, add 1 bag or 2 cans of mixed vegetables, and 2 cups of beef gravy (or I use a combo of cream of whatever soup and a cup of beef boullion from powder.





Put in the casserole dish, top with instant mashed potatoes that you have made according to the package, and if you want, some shredded cheese.





Bake until hot and bubbly.





I make several of these at a time and freeze them.
BEEF STROGANOFF





1 1/2 lb ground beef


1 bag wide egg noodles


2 cans cream of mushroom soup


1 (8 oz) canister of sour cream





Brown beef, drain. Boil pasta, drain. Combine all ingredients in one pan, simmer until its hot. You're DONE! =)

    Cook with Campbells soups. Most cans have 1-2 recipes right on them.


    My favorite is salisbury steaks

    a can of cream of mushroom soup


    mushrooms, fresh or canned work


    bread crumbs


    1/4 cup onion


    1 egg





    Mix beef with 1/4 can of soup, bread crums, egg and onion. Fry until brown.

    OK, buy a 5# log of ground beef. That's about $10. It's good for so many things. And don't use a whole pound when a recipe calls for it. Use about 8-12 oz. to make it last longer. Pasta is cheap. When I'm penny-pinching I make spaghetti one night, and the leftovers go into a baking dish, covered in cheese and black olives and baked the next day. That's 3 days of food right there. A bagged salad is only about $3. Another favorite is Zatarains box mixes. One box of their black beans and rice, or dirty rice (with the burger) lasts us another 2 days. Buy canned stuff on sale, which may or may not be store brands. And when all else fails, get a box of Hamburger Helper. That lasts us 2 days too. Good luck, we pinch pennies right about when the rent is due.

    For $20 to deal with for a week, you won't get a lot of variety, but mix %26amp; match the above %26amp; you'll survive.
    I'll give you the ideas, you can look up the recipes, if needed. Hotdogs browned, then simmered in baked beans, serve with pickles and chips. A tuna or chicken noodle casserole, Canned Spam, browned and served with sauteed cabbage and potato. Hamburger gravy and mashed potatoes, canned green beans or peas. Eggs, bacon, grilled tomato slices, toast. Stirfry of any meat you have with a can of chow mein veggies on rice. Soups %26amp; salads!
    Of course you can. The key is to make your protein go really far. Generally Americans eat too much anyway, a serving of protein is only about the size of a deck of cards.





    It might get a little monotonous, but you will definitely make it through the week. Buy a family pack of bone in thighs and legs. You should be able to get a mixed pack, if not you will probably have to pick one. I can generally get one for less than $5. This will be plenty of protein for your dinners. My family packs generally have 6 legs and 6 thighs. I prefer thighs, but the kids like the legs. This will make you at least 4 cheap meals for about $10. First, just bake four pieces. Season it with whatever you have in the house. Bake at 350. Serve with some veggies and buttered egg noodles. A whole large bag of egg noodles is less than a dollar. Don't buy a whole bag. One large baking potato diced up and sauteed or roasted will be fine for you. Also, buy a bag of veggies instead of just a box. Once you have eaten the chicken boil the bones in salted water. Start with one gallon of water and try to end with about 1 quart. Season with at least salt and pepper, but again, if you have garlic, thyme, onions, carrots, etc, it will give you more flavor. Add the veggies last so they don't turn to mush, For lunch the next day add the any extra chicken you have and some egg noodles to the stock and eat a big bowl of soup.





    Another easy chicken dish is do take the skin off the chicken brown with salt and pepper and add 1 can of diced tomatoes. Serve over pasta. Again, if you have any other appropriate seasonings it would be good. Adding onions and peppers would be delish. You can serve this over egg noodles, or elbows that you can use later in the week : )





    Also bbq chicken. Get the cheapest bbq sauce you can, my store brand is fine and less than $1. I sautee the salt and peppered chicken just until brown then add equal parts of bbq sauce and water. Cover and let simmer about 1/2 hour. It's really tender and good. Again, I pull the skin off. Serve with veggies and oven fries. Just toss some 1 large potato in some oil, salt and pepper. Roast at 400 for about 1/2 hour.





    Alright, you're probably tired of chicken by now, depending on how much you all eat, you might have some leftovers.





    Now well fill in the other nights with your other $10. First get a can of tuna. And just make a tuna salad with mayo, onions, peppers, relish, a hard boiled egg, whatever you have. Top with a chopped up tomatoe for a little more brightness. Use 3/4 of the can with 1/2 a box of macaroni. The other half of the can use for a tuna sandwich the next day.

    You have 3 more dollars to keep you about 20 to pick up extra things. For example you might need mayo. Make egg salad for lunch, eggs on bread for breakfast, eat all your leftovers. You might even want to throw a pack of hotdogs in there and an extra potatoes for that type of night. I don't want hot dogs all the time, but when the time needs, I do it. Also, if you like get a small container of rice crispys. You can have breakfast and splurge on a small container or marshmellows for some rice crispy treats. I still think you are under $25.

    tuna pasta bake is so cheap, cook pasta shells, toss in a can of chopped tomatos, oregano or other herbs, salt pepper, a tin of tuna and a tin of sweetcorn, put in a oven dish top with grated cheese and bake





    macaroni cheese with salad or garlic bread is a cheap dish





    make some homemade vegetable stew that will be really cheap, use onions, mushrooms, carrots and any other veg you want, veggie stock, seasoning, tomato pure and some vegi mite or worcester sauce

    I'm a full-time college student with a crazy schedule. I live with my fiance and we just spend way too much on groceries, yet end up with barely any food that lasts us more than a few days.





    I'd like some recipes that are healthy, quick, easy, but also cheap to buy the food for. Also, we'd like a variety of foods- not just Ramen cooked 500 different ways. haEasy, cheap %26amp; quick recipes for college student?
    Budget Minded Recipes





    COLA CHICKEN


    (And more variations of recipe)


    (My favorite: Wings or Ribs)





    4 skinless, boneless chicken breasts


    1 cup catsup


    1 12oz. can cola (pepsi, coke, etc.)





    Put chicken in a non-stick pan.


    Mix together catsup and cola, pour over chicken.


    Bring to a boil. Cover, reduce heat and cook 45 minutes.


    (turning chicken a few times, while cooking...to prevent from


    sticking to pan)


    Uncover, turn up the heat and continue to cook until the sauce


    becomes thick and adheres to the chicken.


    It turns into the most incredible BBQ sauce. Yummmm!





    You can double the recipe and use more pieces of


    chicken....wings...would be ideal...add some hot


    sauce....presto ';Hot


    Wings';!


    I have used Ribs, just as good.





    I tried this recipe with 'meatballs'....was equally


    as good...served over rice.





    I found another variation.....omit the catsup and add a small


    jar of Salsa (any variety).





    I have tried using Salsa (omitting the catsup....not).


    You'd think a recipe with only '3' ingredients couldn't be


    messed up....wouldn't you??


    Well...while I was preparing to fix the 'Cola Chicken' recipe


    using Salsa.....I was also trying to carry on a conversation with my


    husband...(just proves...I can't do two things at once)....mixed


    Salsa %26amp; Catsup (before I realized I was supposed to leave out


    the catsup) %26amp; Cola........still turned out really tasty (to me)...might


    be a little sweeter than some of you like.





    I fixed chicken wings, (using the above recipe)


    but...I added the spices from a MILD (I don't care for ';HOT';) Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).





    Finally....!! I fixed the 'SALSA' chicken......that's good , too.





    Another (bright)idea.....I thought of trying......replace the


    catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!


    Fixed the shrimp with cocktail sauce......eh...wasn't all that


    great...was OK...probably won't be fixing it again.





    Also tried beef stew cuts......that was pretty good.....I can see


    myself making this again.


    Served both over rice.....think the stew cuts would have been just as


    good over noodles.





    How about using the little cocktail wieners/sausages?





    Gonna try some butterfly cut pork chops鈥?boneless pork chops鈥?.pork steak.





    How about Vienna Sausages ?? Ummm!





    CRUNCHY ONION CHICKEN





    1 1/3 cups French鈥檚 Original French Fried Onions


    4 boneless skinless chicken breast halves


    1 egg, beaten





    LIGHTLY CRUSH:





    Onions in a plastic bag.





    DIP:


    Chicken in egg





    COVER:


    With onion crumbs, press firmly to adhere to chicken.





    BAKE:


    Preheat oven to 400 degrees.


    Place chicken on lightly greased baking pan.


    Sprinkle with additional onion crumbs, if desired.


    Bake for 20 minutes or until no longer pink in center.





    Mushroom Chicken





    4 boneless/skinless chicken breast (or any pieces you like)


    1 can cream of mushroom soup.


    1 can water





    Place chicken in crock pot (or sauce pan for stove top cooking)


    mix soup %26amp; 1 can of water together


    pour over chicken


    cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.





    Serve over noodles or rice or dressing....or???





    CHILLI DOG CASSEROLE


    1 pkg. (8) hot dog buns


    1 pkg. (8) hot dogs (use more if you like)


    1 can Chilli (15 oz. without beans, use more if you want)


    1 small onion (chopped)


    2 cups shredded cheese


    mustard





    DIRECTIONS: Pre-heat oven 350 degrees


    In a 9'; x 13'; baking pan, break up hot dog buns (bite size) and spread in pan.


    Cut up hot dogs (about 1/2'; size) spread over buns.


    Spoon/spread chilli over hot dog/buns.


    Sprinkle onions over all.


    Squirt mustard over entire mixture (don't spread...just make a few lines both ways across mixture)


    Cover with shredded cheese.


    Bake until cheese is melted and bubbly.


    (Hint: If using extra hot dogs %26amp; chilli, don't add extra buns.)





    ';Canned Soup';.


    (My Way!)


    Whatever cans of veggies I have, that I like, in cabinet it goes in the pot.....along with all the juices in the cans.


    Cook on stove top or Crock pot.


    Enjoy!





    Canned:corn...peas...carrots...gr.bean鈥?(any variety)...lima beans...wax beans...tomato (any variety)...potatoes (whole or sliced...or both whatever you like)....You get the idea....lol.





    Also add a package of shredded cabbage (cole slaw mix).


    You can even add a package of onion soup mix.


    If it gets to dry and needs more liquids....add tomato juice...V-8...etc.

    EASY BEEF STROGANOFF





    Ingredients:


    3/4 lb lean ground beef


    1 jar Heinz HomeStyle Savory Beef Gravy (12 oz Jar)


    1 can mushrooms, drained (7 oz can)


    1/2 cup sour cream


    4-6 cups hot cooked noodles


    salt %26amp; pepper, to taste





    Instructions:


    In a medium skillet, cook ground beef over medium heat until browned and thoroughly cooked. Carefully drain liquids and return to stovetop. Stir in Gravy and mushrooms, and bring to a simmer, stirring occasionally. Remove from heat and stir in sour cream, until thoroughly combined. Add salt and pepper, to taste, and serve immediately over hot noodles.





    ';Corny Beanie Weenies.';





    Mix one large can of baked beans (seasoned with brown sugar, onion, and bacon).


    and a package of Weiners (all sliced up).


    with a can of whole kernel corn (drained)





    Heat ingredients, and serve.


    It doesn't get any easier than this, and is suprisingly good!


    P.S鈥?.Might put ingredients in a casserole dish and top with corn muffin mix.





    POT ROAST


    Your choice of beef or pork (to fit crock-pot)


    1 pkg. dry Ranch dressing mix


    1 pkg. dry Italian dressing mix


    1 pkg. dry Brown Gravy mix


    1 cup water


    Put beef in pot.

    CAKE MIX COOKIES (I make these at Christmastime for gift giving)


    White Cake Mix


    2 Tablespoons water


    2 eggs


    1/2 cup cooking oil


    1 teaspoon almond extract


    1/2 cup chopped nuts


    powdered sugar





    Mix all ingredients, except powdered sugar.


    Drop batter (about a teaspoon per cookie) into a bowl of powdered sugar.


    Roll in sugar until it is an approximate shape of a ball.


    Place ion a lightly greased cookie sheet.


    Bake at 350 degrees about 18 minutes, until lightly browned.


    Cool on wire racks. Makes about 4 dozen cookies.


    (Use any flavoring or cake mix you desire.)





    Kreamy Kool-Aid Pie





    1-(6 g) package un sweetened Kool-Aid powdered drink mix


    1-(14 oz.)can sweetened condensed milk


    1-(8 oz)container Cool Whip frozen whipped topping, thawed.


    1-(9 inch) Graham Cracker Pie Crust (or Cookie crust)


    Cool Whip for top (optional)





    1. In a medium bowl mix Kool-Aid and condensed milk, thoroughly.


    2. Fold in Cool Whip.


    4. If desired, spread more Cool Whip on top.


    5. Chill for a minimum of 4 hours.

    Not sure I can begin to compete with PattsyWattsy's monster response (bravo Pattsy!), but the one suggestion I will make is the Italian pasta recipe I wish I'd known at college...





    This was taught to me by my Italian mamma-in-law Marisa: it takes just 10 minutes and it's delicious... I call it 'breakfast pasta'.





    * Boil up a pan of boiling water, containing two handfuls of salt (to bring out the taste), and throw your pasta in.





    * Melt an ounce or two of butter in a frying pan. (And if you have any medium-hard cheese, chop this into 1cm cubes and place in a mixing bowl.)





    * When the pasta is done, drain it, put it in the mixing bowl and pour over the melted butter.





    * Give it all a good stir to coat the pasta and serve with a fried egg on top.





    Sounds simple, because it IS simple, and it tastes absolutely divine!

    You can stuff like tomatoes, mushrooms and peppers. green beans are really nice in a salad with olives and feta. Courgette crumble...peel courgettes and place at bottom of a dish, cover with dollops of garlic cream cheese and then sprinkle a mixture (mix before hand) of flour, egg, bread crumbs and parmasan so its all crumbly...on top and bake for 20 mins...awesome


    Checken breast marinated overnight in lemon juice, chilli, ginger and sesame oil. Bake for 20 mins or until done and serve with salad...bad ***

    For a can of Salmon I blend in well, chopped green bell peppers, sometimes a Jalape帽o, chopped onion (sweet), 1 egg, Italian Style bread crumbs (these have Parmesan Cheese in them with the seasonings) and the Salmon (cleaned of skin and bones. I add the juice of the Salmon also.





    Mix well and form into patties and fry them in oil. Not too much oil, you don't want them to float but enough to cook them well. I like using Crisco because it fries evenly.
    I use one can salmon take bones out and keep juice, put in a large bowl...


    add one egg


    one small to medium diced onion


    one small diced green pepper


    1/4 cup flour





    mix all together, rinse and dry hands,


    Preheat cooking oil in skillet, maybe 1/4 '; deep to medium high heat not to hot,but enough your patties won't absorb the oil


    Make patties in your hands and lay in hot oil, fry on each side till golden brown..remove and place on paper towels





    (Tarter Sauce, save some of your diced onion, a tbsp of pickle relish(we prefer sweet) but you can use dill if its you prefer...and mayonise, mix and refrigerate till ready

    SALMON PATTIES





    1 (1 lb.) can salmon


    1 egg


    3/4 c. milk


    3/4 c. cracker crumbs


    1 tsp. chopped onions


    1 tbsp. lemon juice


    1 tbsp. flour





    Mix together all ingredients. Use butter or shortening and brown in skillet on both sides. Makes 6 to 8 patties.





    For Variety, add 1 Tbls Worcestershire Sauce, or 陆 tsp dill weed.
    Hambone 2's recipe sounds about perfect, but all of them forgot to say to serve them with creamed peas.

    I love to cook and my family is used to having nice meals a lot. But, my hubby lost his job last week, and we really need to tighten our belts and save money, especially on our grocery bill.     Your best bet is to use meat as a flavoring, rather than a main ingredient. Use rice, pasta, and/or veggies as extenders.





    For example, cut two boneless chicken breasts into chunks or strips. Stir fry until done, and remove from the pan. Prepare a bag of frozen stir fry veggies according to the directions, and add the meat until heated through. Season with teryaki sauce, and serve over rice.





    Or, cut a pound of flank steak into small cubes and brown lightly in oil. Add a package of Mrs. Grass' Soup starter and the amount of water that the directions indicate. Simmer until the meat is tender. You can add left-over veggies or some extra noodles to extend the number of servings.





    Cook some egg noodles in a can of chicken broth, then add diced cooked chicken (you can use the already prepared Tyson strips), some chunks of carrots, a small can of peas, and a little bit of onion and celery. Simmer until the veggies are done and season with salt, pepper, and a little onion and garlic powder.





    A canned ham is a good choice, too. Bake a five pound canned ham and slice part of it for one meal. Serve with baked potatoes and a veggie. Cut the remaining ham into cubes and add some to a pan of scalloped potatoes made from a boxed mix.





    Or, season a large jar of Northern beans with ham chunks, diced onion, and a diced carrot. Serve with corn bread made from a packaged mix.





    Other things that are cheap and good are chef salads, mac and cheese with hot dogs cut up in it, and your favorite pasta with cooked broccoli, some cubed chicken and a jar of Alfredo sauce.





    These are all easy, quick recipes that don't cost much to make and are very filling. And best of all. . .no tomato sauce in any of them!

    I have a recipe called ';Cowboy dinner'; I think if you google it you should find the recipe for it. It is a casserole type thing.


    Basically it is:


    Ground Beef (cooked)


    Can of corn


    Salsa


    Cornbread Mix (make the batter)


    cheddar cheese





    Cook meat and drain. put it in a 13 x 9 pan; pour in drained corn; salsa


    Spread cornbread mix on top; sprinkle with cheese.


    Bake for about 25 minutes or until the bread is browned on top and cheese melted.





    You can make more or less depending.

    also pasta/rice. add vegetables to it when cooking. frozen work well such as peas,carrots, brocolli, etc.
    Breakfast is by far the cheapest meal of the day and so easy to make.....and seriously do you take time to eat it in college because we never did! Make things like eggs, pancakes, french toast, biscuits and gravy, hashbrowns are super simple and yummy too! Breakfast meat can get pricey but just add it when you can......if you make pancakes you can buy the just add water type for a buck a box and then you can afford to do a package or two of bacon. Also try doing things like hot wings or bbq wings they sometimes run those on sale to buy the wings or legs and they work great for that too.......just use your deepfryer or a pan on the stove.........just be careful and don't overfill so you burn your house down. Also what about hamburger helper or tuna helper? They make great flavors of those or even fish sticks.........I am almost thirty and I love those with mac and cheese and peas and what a cheap meal!     1 tablespoon of vegetable oil


    1 cup of long grain rice


    2 1/2 cups cold water

    In a skillet heat oil over medium heat. Add rice and cook until lightly browned. Add water and remaining ingredients, bring to a boil.

    This is the BEST recipe, authentic and super easy. I'll even give it to you in a large portion





    Mexican Beans





    3 large cans of pinto beans (drained and rinsed)


    1 white onion, quartered


    4-6 cloves garlic


    Enough vegetable broth to BARELY cover beans (important)


    1 tsp cumin


    1 tsp Mexican chili powder


    2/3 tsp Mexican oregano (ground)


    Salt and pepper to taste





    Put all ingredients in a stock pot, bring to a boil then simmer on low for 30 minutes. Transfer to blender or food processor in batches and blend until smooth. (that is the only semi-difficult part- I use a hand immersion blender- but it is worth it).





    I make this all the time (in smaller batches) and everyone is very impressed with it, they are like, ';you made that!? It tastes just like its from a Mexican restaurant.'; And it is super easy.





    (usually you can get these spices by the produce in the grocery store in little bags for like 99 cents a piece-- or try Wallgreens they usually have spices for 99 cents a piece, too, though I don't know they'll have Mexican chili powder. You can, if you must, use regular chili powder, but the oregano must be ground oregano, not the Italian leaf style)

    Super-easy: baked chicken (boneless chicken thighs with salt and pepper, baked 10 minutes at 200C/400F), steamed broccoli or spinach (put in a steamer with boiling water for 3-4 minutes) and oven fries (shoestring potatoes, tossed in olive oil, seasoned with season salt, and baked for 10 minutes at 200/400 -- can go in with the chicken). Elegant and easy!





    Chili dogs. Potato salad with fried chicken. Tuna casserole (-:. Spaghetti and meatballs (bake the meatballs -- it's super easy that way! And no burning!). Salad Nicoise (basically, a can of tuna, some boiled potatoes, green beans, pretty veggies like radish or carrot slices, some cheese, whatever). Chef salad. Beef stew.

    500g meat(minced)


    2 cans of diced tomatoes

    herbs


    2 1/2 cups of milk


    1 1/2 of cheese


    1 carrot


    zucchinni if you like


    onion


    lasagna sheets


    3 large tbl spoons of tomato paste





    cook up meat with a little oil with onion.


    add tomatoes and carrots and all other veggies you put in.


    stir around till covered


    use the empty tomato cans and put a small amount of water in them and swill around to get the remaining tomato and add a bit of liquid.


    add pepper and herbs


    let it simmer for a while








    sauce


    sift flour into saucepan(optional, might get some lumps away quicker)_


    then add the milk and stir around until thickening slightly, add cheese and some pepper and keep stirring until at a good consistency, like pourable but not too liquidyy.


    then lay a layer of meat onto bottom then sheet of lasagna, then some white sauce and meat, then sheet, keep going until all used up.


    put in oven on 180/190 for 30-40 minutes, sometimes less.





    before you put it into the freezer let it cool so it doesn't poison you.

    Stew or braise those for the most flavour, with lots of veggies.


    The basic 4 are potatoes, onions, carrots, %26amp; celery.


    Get a variety of colours in other veggies: greens, yellows, etc.


    Substitute chicken or turkey (ground) for hamburger meat.


    Choose fish at least once a week, if only canned tuna.
    Banquet Home Style Bakes would be great as they contain everything you need, including meat. They are really good and would probably give you two meals from one box. The Cheesy Hash Browns with Ham and Creamy Turkey with Stuffing is delicious.

    35.00 is not much to last for almost a month. Have you checked to see if you are eligible for any government help? Are there any food pantry's that you could go to? There is no shame in going for help when you need it, and honey it sounds like you do.


    But back to your question, since you are pregnant you need to make sure that you are eating right. you will need proteins, veggies and fruit.





    Chicken ';pick of the chick'; it is leggs, thighs, wings and I think it comes with a breast. Dont buy the boneless, cost too much.


    Ground meat- get the family size - cost less per #.


    Frozen veggies, just as good as fresh, just not as expensive.


    Fruit - what ever your store has on sale or even buy apple sauce.





    Potatoes, rice and dry beans and pasta.





    With the ground beef - separate into meal size portions and freeze, same with the chicken.





    One night you could have meat loaf - season the ground beef with salt, pepper and what ever seasonings you have in your pantry, add a egg to bind it. Serve with a veggie. save any left overs, you can use the left over meat loaf in a pasta dish for another night.





    Another night bake enough chicken for your meal, again season with what you have on hand, serve with rice. Save left overs, you can use the chicken and rice in a soup.

    When I was broke, I made a lot of homemade soup.





    This was one easy recipe:





    Buzz in a blender:


    Can of chicken stock


    Can of canneli beans


    one Carrot, cut to 1'; chunks


    One medium onion, quartered





    Move to a half gallon pot. add in


    One more can of Canneli beans(unblended)


    one can of prepared Collard greens.


    one stick of butter.





    Bring to a simmer for about 20 minutes








    Go to the bakery section of the supermarket after 9pm when most items go on half price mark-down. And if you have a bakery wholesaler nearby they often have overruns on sale for under half price.





    The deli section may also have mark downs on cooked chicken and other items that they will otherwise throw out at the end of the night. If it sits under a heat lamp, they will sell it for cheap.
    Here is a few ideas:


    this you will need to buy: 5lbs of hamburger meat, 1can of chili, 1 can of corn, 1 can of tuna, 6 pack of roman noodles

    Don't buy prepared foods- buy raw ingredients: Fresh vegetables, dried beans, rice, that sort of thing. You'll save a ton of money and be healthier, too.





    When I was a student and and had almost no money and no food around, I'd made a rice pilaf, like this:





    Chop an opinion and fry it in some olive oil (or any good oil) my large iron skillet until it was soft





    Add two cups of rice and stir until the rice starts to brown





    Add all the leftover bits of meat and veg in the fridge





    Slowly add 4 cups of vegetable stock, or bullion, or chicken broth, stirring constantly





    Cover, lower the heat as far as you can, and check in 20 minutes.

I work with my hands, so I need to maintain my muscles and stamina.And I'm on a tight budget. I'm trying to quit meat 'cold turkey.' So now, I have this huge block of firm tofu sitting in my fridge and the majority of the reciepes I've found thus far seem a little too fancy for my taste.     I don't know of any websites, but I will share my simplest everyday recipes with you. Hope this helps you at all : )





    You can store tofu in fresh water. In a tight plastic container and in fridge tofu will stay fresh approx. for one week, if you remember to change fresh cold water every day. (I sometimes forget...but every other day seems to be enough). I tend to use one chunk in 4 to 5 days. But the water is necessary. You will know by the smell...and taste is awful. also the structure of tofu will change, it will become softer in a strange way.





    My son is not one for fancy food either (8 years), but loves tofu. He will actually eat it raw, unprepared if he is hungry. I just cut him carrot-thick sticks of it. I did not teach him this, he invented it himself.





    One other is to fry tofu quickly in olive oil and sprinkle some curry powder on it, children like mild of course, but you can find your own favorites. Just eat with cooked brown rice, or a rice mixture (brown with wild rice is great) add some steamed broccoli to the side etc.





    Tofu in cubes and fried with curry is delicious with gently baked apple cubes inside a tortilla or a crepe. Crepes filled with other vegetarian stuff as well is great! Try spinach with feta cheese and roasted pine nuts. You can prepare crepes from soy-milk, if you have given up dairy as well. Eggs I don't know how to replace. But we buy organic.





    A classic tofu recipe is tofu in wok with japanese soy sauce and sesame seeds.





    If you grow tired of tofu time to time, remember that nuts and seeds have protein, calcium and other good stuff in them as well.

    Green Lentil Soup with Lemon





    2 cups green lentils, washed


    3 teaspoons olive oil


    6 cups vegetable stock


    1 bay leaf


    2 large onions, chopped


    3 cloves garlic, crushed


    2 teaspoons coriander


    2 teaspoons cumin


    1/2 teaspoon sweet Hungarian paprika


    2 large carrots, diced


    2 tablespoons lemon juice, or to taste


    salt and pepper





    Heat oil in pot %26amp; add lentils, stir briefly %26amp; add the onions %26amp; garlic. Cook for 3 or 4 minutes, stirring constantly.





    Add the bay leaf %26amp; spices %26amp; stir for 1 minute.





    Finally add the carrot. Pour in stock, raise heat %26amp; bring to a boil.





    Simmer for 60 minutes until the lentils start to puree. Remove from heat %26amp; let cool. Blend till smooth %26amp; return to the pot.





    Add lemon juice %26amp; salt %26amp; pepper. If too thick, thin with a little more stock.

    4 (6-oz) skinless, boneless chicken breast halves


    3/4 teaspoon salt


    ¼ teaspoon freshly ground black pepper


    2 Tbsp. butter


    ½ cup A/P flour


    ½ cup dry white wine


    ½ cup fat-free, less-sodium chicken broth


    2 garlic cloves, minced


    1 pound asparagus spears, trimmed


    2 tablespoons chopped fresh parsley


    1 tablespoon fresh lemon juice


    1. Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to ¼” thickness using a meat mallet or small heavy skillet. Sprinkle chicken breasts evenly with salt and freshly ground black pepper.





    2. Melt butter in a large nonstick skillet over medium-high heat. Place flour in a shallow dish. Dredge chicken in flour. Add chicken to pan; cook 3 minutes on each side or until done. Remove chicken from pan; keep warm.

    Stuffing chicken breasts is a beautiful way to dress up chicken. Not only do the stuffings add color, they are delicious as well!








    Makes:4 servings

















    4 bone-in chicken breasts (1 1/4 lb)


    1/2 cup shredded smoked Gouda or Swiss cheese (2 oz)


    1/4 teaspoon ground nutmeg


    1 package (10 oz) frozen chopped spinach, thawed, squeezed to drain


    1/2 teaspoon salt


    1/4 teaspoon pepper


    2 teaspoons butter or margarine, melted








    1. Heat oven to 375掳F. Grease 9-inch square pan. Remove bones from chicken breasts. Do not remove skin. Loosen skin from chicken breasts.


    2. In medium bowl, mix cheese, nutmeg and spinach until well blended. Spread one-fourth of mixture evenly between meat and skin of each chicken breast.     1 can soup, either beef consomme or broth (chicken broth works too)


    1 cup rice, uncooked


    1 bag frozen veggies (any kind you like but a mix works better)


    1 lb beef/chicken


    some butter


    salt and pepper





    saute beef/chicken in a little butter. Add any type of spices you like (I'd use some parsley, paprika, salt, pepper, celery seed; and a little lemon pepper in stead of regular pepper for chicken). Set aside. Cook rice and frozen vegetables in soup, with 1 cup water (rice is 1 cup rice with two cups liquid).


    Put rice in plate, top with sauteed beef/chicken.





    Here is a recipe site using Campbell's soups...many good dishes, and you can leave out the ';expensive'; ingredients, substitute others and still come up with a good, inexpensive meal!

    hi, you can make: Cheese Tomato Potatoes - Serves 4





    Ingredients:


    75g/ 3oz Cheese


    450g/ 16oz Potatoes


    400g/ 14oz Tinned Tomatoes





    Method:


    1. Chop the potatoes in half and put in cold water. Bring to the boil and simmer for 5-10 minutes until just soft. Put in an ovenproof dish.





    2. Season the tomatoes with salt, pepper and sugar and pour over the potatoes. Then cook in a preheated oven at 180*C for 15 minutes.





    3. Sprinkle the cheese on top and cook until the cheese melts and browns.





    All you need is just few objects! and this is a cheap recipe too !

    For us it's breakfast for dinner. It begins with eggs, you can make a scramble with anything in the fridge (sandwich meat, peppers, tomatoes, etc.) or just do over easy or scrambled with your bread options - toast, bagel, english muffin, whatever. If you have bacon, or canadian bacon you can use that. Depending on what you have, you can even do breakfast sandwiches which are easy and quick. Sometimes we make grits. It's all quick and easy and cheap since you are just pulling whatever you have in fridge and cupboards.

    I make this all the time when we're in a rush, hungry or didn't have time to go to the market:





    ARROZ CON POLLO (serves 2)


    (';Chicken with Rice';, a Cuban/Puerto Rican dish)





    RECIPE:


    Long grain rice (1 part)


    chicken broth (for fuller flavor) or water (1 1/4 part liquid)


    2 or 3 pieces of whole chicken thigh or breast meat


    (no bones)


    ';SAZON'; seasoning (1 packet)


    (Goya or other brands...found in Hispanic Markets or


    Spanish section of the grocery stores)





    (Optional.....if you don't have any of these, it's okay...however any or some will enhance the flavor):


    approx 3 tablespoons chopped onions;


    1 tablespoon minced garlic


    6 stems of fresh cilantro (cut a portion of the stem off


    but leave it whole)





    On medium high, in a pot or pan with a lid**, heat the uncooked rice in olive or canola oil for a few minutes until the rice loses its transparency (approx 3 minutes). Then add the chicken broth or water (careful as it'll steam up); add the packet of Sazon seasoning, then place the uncooked chicken into the rice %26amp; liquid. Additionally, you can add all or some of the optional ingredients. As soon as it starts to come to a boil, cover with a lid, lower the heat and simmer for 16 minutes.





    Turn off the stove (DO NOT open the lid) and allow it to sit for an additional 8-10 minutes (this minimizes the rice from sticking to the bottom and the steam also allows it to continue to cook).





    The rice will have a yellow color due to the seasoning. Take out and discard the cilantro. Also take out the chicken and cut it up into small pieces. You're ready. ENJOY!





    **(If you have a heavier pot or pan with a heavy lid, use one that is deep enough to avoid liquid and steam from escaping during the cooking process)

    Why dont you get some boneless chicken thighs and some vegies (Pots, sweet pot, beans, cauliflower peas, corn kernels, just whatever you have in the cupboard) and put them all in a pot with some water and stock, about half and half, so long as its all covered. Throw in some parsley and maybe some other herbs. Cover and cook on low for a few hours until the chicken is falling apart and serve with some nice fresh crusty bread!!! YUM.
    Use thawed boneless, skinless pieces. They're cheap enough when bought by the frozen bag full. Rub with a spice called Adobo (With Pepper), usually found in the hispanic section of the grocery store, as well as some parsley, and maybe a little seasoned salt. Broil each side for *no more* than ten minutes. Cook them a few inches below the broiler burner. Try to watch them, and turn them when they are white, with the surface getting crispy and golden brown.

    Bring to a boil. Cover, reduce heat and cook 45 minutes.


    (turning chicken a few times, while cooking...to prevent from

    Uncover, turn up the heat and continue to cook until the sauce


    becomes thick and adheres to the chicken.


    It turns into the most incredible BBQ sauce. Yummmm!





    You can double the recipe and use more pieces of


    chicken....wings...would be ideal...add some hot


    sauce....presto ';Hot

    I tried this recipe with 'meatballs'....was equally


    as good...served over rice.





    I found another variation.....omit the catsup and add a small


    jar of Salsa (any variety).





    I have tried using Salsa (omitting the catsup....not).


    You'd think a recipe with only '3' ingredients couldn't be


    messed up....wouldn't you??


    Well...while I was preparing to fix the 'Cola Chicken' recipe


    using Salsa.....I was also trying to carry on a conversation with my


    husband...(just proves...I can't do two things at once)....mixed


    Salsa %26amp; Catsup (before I realized I was supposed to leave out


    the catsup) %26amp; Cola........still turned out really tasty (to me)...might


    be a little sweeter than some of you like.





    I fixed chicken wings, (using the above recipe)


    but...I added the spices from a MILD (I don't care for ';HOT';) Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).





    Finally....!! I fixed the 'SALSA' chicken......that's good , too.





    Another (bright)idea.....I thought of trying......replace the


    catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!


    Fixed the shrimp with cocktail sauce......eh...wasn't all that


    great...was OK...probably won't be fixing it again.





    Also tried beef stew cuts......that was pretty good.....I can see


    myself making this again.


    Served both over rice.....think the stew cuts would have been just as


    good over noodles.





    How about using the little cocktail wieners/sausages?





    Gonna try some butterfly cut pork chops鈥?boneless pork chops鈥?.pork steak.





    How about Vienna Sausages ?? Ummm!











    CRUNCHY ONION CHICKEN





    1 1/3 cups French鈥檚 Original French Fried Onions


    4 boneless skinless chicken breast halves


    1 egg, beaten





    LIGHTLY CRUSH:





    Onions in a plastic bag.





    DIP:


    Chicken in egg





    COVER:


    With onion crumbs, press firmly to adhere to chicken.





    BAKE:


    Preheat oven to 400 degrees.


    Place chicken on lightly greased baking pan.


    Sprinkle with additional onion crumbs, if desired.


    Bake for 20 minutes or until no longer pink in center.








    Mushroom Chicken





    4 boneless/skinless chicken breast (or any pieces you like)


    1 can cream of mushroom soup.


    1 can water





    Place chicken in crock pot (or sauce pan for stove top cooking)


    mix soup %26amp; 1 can of water together


    pour over chicken


    cook on medium heat until boiling then reduce heat and cook until chicken is really tender %26amp; falling apart.





    Serve over noodles or rice or dressing....or???
    Easy ,cheap and very tasty fried chicken.








    Get 4 chicken legs. Marinate it with fish sauce (patis ), calamansi or lemon juice and fresh rosemary for 2 hours.Fry them till golden brown. Accompany them with french fries with skin on and sliced cucumber with yoghurt dressing..
    Chicken thighs with rosemary. Just cook at the temperature and time it says on a package of shake n' bake, but just put some rosemary on the chicken. Also check out kraft.ca and they have lots of one pan recipes and stuff.

    Homemade Chicken or Fish Nuggets


    This was originally used for fish but I have also used it for chicken nuggets the same way, I just cook them a little longer:





    2 or 3 Tilapia filets


    1 egg


    about 1/2 c milk


    about 1/3 c parmesan cheese (grated)


    1/2 teaspoon salt (or to taste)


    1/2 teaspoon pepper (or to taste)


    about 1 cup bread crumbs





    Preheat over to 400. Cut the fish (or chicken) up into bite size pieces. Put the bread crumbs, salt, pepper, and parmesan into a ziploc bag. Mix the egg and the milk in a good sized bowl and add the fish (or chicken) nuggets to the bowl.





    Take the nuggets out of the milk/egg mixture a few at a time and drop into the bag. Shake around until well coated and then place on baking sheet (you can grease it but I usually just line with foil). Do this until they are all coated and bake about 15-20 minutes depending on the size of your nuggets, slightly longer for chicken. They are good!

    Pasta With Chicken in Creamy Garlic Sauce


    2 cups shell pasta


    2 tablespoons canola oil


    4 boneless skinless chicken breast, cubed


    4 cups milk


    3 tablespoons flour


    3 tablespoons butter or margarine


    2-3 minced garlic clove


    1 teaspoon salt


    1/2 teaspoon pepper


    1/2 cup grated parmesan cheese


    1/3 cup frozen peas or broccoli (optional)





    Directions


    Boil pasta in lightly salted water.





    Fry chicken in canola until lightly browned, set aside.





    In large pot saute garlic in butter or margarine, do not brown.





    Add flour, salt, pepper to garlic and butter or margarine and mix to form a roux.





    Slowly add milk, whisking to prevent lumps.





    Add parmesan cheese and mix well.





    Cook over medium heat stirring often until sauce thickens.





    Add chicken to the sauce.





    Drain cooked pasta and mix into sauce.





    Serve immediately.

    INGREDIENTS


    4 skinless, boneless chicken breast halves


    1 (10.75 ounce) can condensed cream of chicken soup


    1 egg


    seasoning salt to taste


    1/2 cup all-purpose flour


    1/2 cup cornstarch


    1/2 teaspoon garlic powder


    1/2 teaspoon paprika


    salt and pepper to taste


    oil for frying


    DIRECTIONS


    In a shallow dish or bowl combine the soup, egg and seasoning salt (be careful, as soup is already salted); mix together. Dip chicken in mixture and turn to coat completely. Set aside.


    In a resealable plastic bag mix together the flour, cornstarch, garlic powder, paprika, salt and pepper. One at a time, place chicken pieces in bag, seal and shake to coat. Add more flour and/or cornstarch as necessary, but add them in equal parts (there should be an equal amount of each in the mixture).


    Place coated chicken on a platter and allow to sit until it becomes doughy (this is critical, to ensure crispiness when fried). Heat oil in a deep skillet over medium heat; be sure to use enough oil to cover chicken pieces. Once chicken is doughy, test oil by dropping a piece of the 'dough' into it; the oil is ready when it starts to fry immediately.


    Fry chicken pieces in oil for about 7 to 10 minutes each, or until cooked through and juices run clear. Drain on paper towels and serve.

    Buttermilk Baked Chicken





    1/4 cup butter or margarine


    4 bone-in chicken breast halves


    1/2 teaspoon salt


    1/2 teaspoon pepper


    1 1/2 cups buttermilk, divided


    3/4 cup all-purpose flour


    1 (10 3/4-oz) can cream of mushroom soup, undiluted


    Garnish: chopped fresh parsley





    Melt butter in a lightly greased 13- x 9-inch baking dish in a 425 degrees oven.





    Sprinkle chicken with salt and pepper. Dip chicken in 1/2 cup buttermilk, and dredge in flour.





    Arrange chicken, breast side down, in baking dish.





    Bake at 425掳 for 25 minutes. Turn chicken, and bake 10 more minutes.





    Stir together remaining 1 cup buttermilk and cream of mushroom soup; pour over chicken, and bake 10 more minutes, shielding chicken with aluminum foil to prevent excessive browning, if necessary. Drizzle gravy over chicken and Mashed Potatoes. Garnish, if desired.

    Chicken Caliente Casserole





    Butter, for greasing casserole


    2 1/2 cups large-diced cooked chicken


    3 cups cooked rice


    1 cup sliced celery


    1 cup sliced green bell pepper


    1 cup sliced onion


    1/2 cup mayonnaise


    1/2 cup sour cream


    2 tablespoons freshly squeezed lemon juice


    1 tablespoon chili powder


    2 teaspoons fine salt


    1/2 teaspoon garlic powder


    1/2 teaspoon hot sauce


    3 tomatoes, cut into wedges


    1 1/2 cup corn chips, crushed





    Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.


    In a bowl, combine all the ingredients except the chips and mix well. Transfer the mixture to the buttered dish, top with the chips, and bake until hot and bubbling, about 30 to 35 minutes. Serve immediately

    Chicken curry





    Ingredients


    4-6 medium tomatoes


    1 medium onion


    4 tbsp vegetable oil


    3cm/1in piece root ginger


    2 garlic cloves


    1-2 mild green chillies


    1 tsp ground coriander


    1 tsp ground cumin


    录 tsp ground turmeric


    salt and freshly ground black pepper


    100ml/3陆fl oz water


    1 free-range chicken, jointed into 8 pieces, or 8 thighs and/or drumsticks


    2 tbsp yoghurt


    1 lime (or lemon)


    a small bunch of coriander leaves


    cooked rice, to serve





    Method


    1. To skin the tomatoes, nick the skin of each tomato with the point of a sharp knife, then put the tomatoes in a bowl next to the sink and pour over some very hot water from the kettle to cover. Count to 20, then carefully pour away the water. When the tomatoes are cool enough to handle, peel away the skin, halve the tomatoes, squeeze out most of the pips and juice into an empty bowl, and discard. Chop the flesh roughly and put it down on a plate to one side.


    2. Peel and finely chop the onion. Fry the onion in the vegetable oil in a large heavy-based saucepan over low to medium heat for about ten minutes, stirring from time to time so that it turns an even golden brown. Watch carefully to make sure it doesn't burn.


    3. Meanwhile, peel and finely chop the ginger and the garlic.


    4. Slit the chilli using a sharp knife. Slice the flesh away from the cluster of seeds in the middle. Avoid touching any part of the chilli with your fingers if you can, as it is very easy to get chilli in your eyes, and that will sting. You can use a fork to hold the chilli down or wear rubber gloves. Chop the chilli finely.


    5. Measure the ground spices into a teacup. Add the ginger, garlic and chilli to the pan, stir them around and fry for another minute or so. If you want your curry to be hot as well as spicy, include some or all of the chilli seeds. Then add the spices in the cup into the onions. Fry the spices for a minute or two, stirring all the time so that they do not stick. Add some salt and freshly ground black pepper.


    6. Pour in the water and the tomatoes, bring to the boil, turn down the heat a little and let the sauce simmer for 5-10 minutes.


    7. Add the chicken pieces to the pan and stir them around so they are covered with the sauce. Put the lid on the pan, turn the heat down and let the chicken cook for 30-40 minutes, stirring occasionally. Chicken thighs will take longer to cook than breast pieces.


    8. Now add the yoghurt to the chicken and stir it in. When the sauce is gently bubbling again, scoop up a little in a teaspoon, blow it cool and taste it. The sauce will probably taste quite sweet because of the tomatoes. Cut the lime in half and squeeze its juice into the sauce. Stir and taste again, and decide whether you want to add the second half.


    9. Finally, chop the fresh coriander leaves and sprinkle them on to the curry just before you serve it with the rice.

    Before Pay Day Fried Rice





    3 tablespoons vegetable oil, divided


    3 eggs, beaten


    3 cups cold, cooked white rice


    2 cups chopped cooked chicken


    1/2 cup sliced celery


    1/2 cup shredded carrot


    1 cup frozen green peas, thawed


    2 green onions, sliced


    3 tablespoons soy sauce





    Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Pour in the eggs; cook and stir until scrambled and firm. Remove from wok, and set aside.


    Put remaining 2 tablespoons of oil in the wok and turn heat up to high. Stir in rice until each grain is coated with oil. Stir in chicken, celery, carrot, peas and green onions. Reduce heat to medium, cover and allow to steam for 5 minutes. Stir in scrambled eggs and soy sauce, and cook until eggs are heated through

    CHICKEN QUICK STIR FRY





    2 chicken breasts, boned (or buy the boneless or 8-10 oz. of chicken tenders)


    1 sm. bell pepper, cut in slices


    1 sm. onion, sliced


    1 stalk broccoli, cut into bite sized pieces


    1 carrot, cut into bite sized pieces


    4-8 oz. snow peas


    1 clove garlic, minced


    1/2 tsp. fresh ginger, grated (opt.)


    2 tbsp. cooking oil


    1 tsp. sesame oil


    Soy sauce or teriyaki sauce





    Or Bird's Eye frozen vegetable mix to suit your taste (approximately 2 cups).


    Prepare chicken and vegetables by cutting into bite sized pieces (except snow peas, leave whole). Heat skillet or wok until hot. Add oils. Brown chicken. When chicken is almost done, add onions, bell peppers, garlic, ginger and vegetables. Cook until fresh vegetables are to desired doneness or until frozen vegetables are hot through. Serve with rice and top with soy sauce or teriyaki sauce.

    6 to 8 chicken drumsticks, washed, skin removed


    3 tablespoons butter


    2 tablespoons lemon juice


    salt, pepper, and Creole seasoning or an herb seasoning blend

    PREPARATION:


    Heat oven to 375掳. Grease a 9x13-inch baking dish or spray with cooking spray. Combine butter and lemon juice; brush chicken pieces all over. Sprinkle with the seasonings. Combine bread crumbs and Parmesan cheese in a shallow dish; coat chicken pieces well.

    Arrange chicken pieces in the baking dish and sprinkle with the remaining crumbs; drizzle with any remaining butter mixture.


    Bake for 45 to 55 minutes, until browned and juices run clear when pricked with a fork.

    POLLO EN FRICASE





    3 lbs. chicken pieces, seasoned


    3 tsps. adobo (this is an all purpose seasoner to use on the chicken)


    3 tbsp. olive oil


    1 tbsp. vinegar


    3 tbsps. garlic, mashed

    1 cup tomato sauce


    1 cup white wine


    1 hoja de laurel


    8 olives stuffed with red peppers

    Season the chicken ahead of time (at least 1 hour) and refrigerate until needed.





    In a medium sized sauce pan heat olive oil, add chicken and cook until it is brown on both sides. Remove from oil and drain. En the same pan add the sofrito and cook for 3 minutes or so. Add the chicken and the rest of the ingredients, season to taste, cover and cook over medium heat for 35 minutes until the chicken is tender

    Saturday Chicken


    5 servings





    10 chicken thighs (or whatever you prefer)


    1 can condensed cream of mushroom (or cream of chicken)


    1 cup of cream (dont cheat and use milk; the cream makes a lot of difference)


    salt, garlic powder, and paprika- to taste


    chopped parsley





    Season chicken with salt, garlic, and paprika. Next, spread it out, in one layer baking pan. Dilute the soup with the cream; pour it over the chicken, and sprinkle parsley on top.


    Bake , uncovered, at 350' for 1 hour or until juices run clear when chicken is pierced with fork.


    Makes a delicious gravy. Serve with mashed potatoes or buttered noodles or rice.
