Does anyone have any good cheap family recipes that I can make, I am a reasonable cook?

heck yeah.. corn soup and frybread!! corn soup is easier to describe... and a lot of Natives make it differently, but i start out by frying in a soup pot some cut up stew beef and cut up bacon together... i add some cut up potatoes and cut up onion and start cooking those... i start to salt and pepper it some, then... then i add some water (not a whole whole lot!) and then when the potatoes are getting tender, i add a can of white shoepeg corn and a can of gold and white mixed corn. (i like the vacuum packed kind... it tastes a lot fresher to me)..... and frybread isn't too hard, but you might be concerned about its nutritional value for your family.... let's see if i remember the recipe correctly... you might want to check the link below for a frybread recipe... mix up about 2 cups of flour with about a tablespoon and a half of baking powder, and about 1 cup or so of lukewarm water, and a dash or two of salt. let it sit on the counter for about 15 mins. heat up some oil to fry it in. begin to separate it (the dough) into small balls, and lightly coat it in flour. when you're ready to begin frying, gently pull it to flatten it.... and drop it in hot grease.... it should be golden brown on the outside... and should end up fluffy... it took me a few tries to get it down just right... my dad laughed at me on my first try... on my first try it was thick and hard instead of big and fluffy. ick! lol. good luck. also, we like chicken tettrazini.... it's a long recipe to type, but you might search for it on yahoo.comDoes anyone have any good cheap family recipes that I can make, I am a reasonable cook?
We alway like a good chicken sandwich off the movie spanglish.





Toasted bread x2 , cheese, Tomatos, mayo, lettuce, grilled chicken breast, 1 egg fried sunny side up. Make it jsut like a sandwich and put the yummy egg inside*** It tastes soooo good.
Take Anon's corn beef hash recipe, top each plate with a sunny side up egg, serve with tomato slices and your favorite toast (can't beat sour dough though). Not for breakfast anymore.
For a really quick meal I take leftover chicken cut up or canned chicken chunks and add to cornbread stuffing mix along with a can of corn. Make the stuffing recipe, for quick meal with the base costing about a dollar.





Another quick one that I do is to add a can of tuna to macaroni and cheese mix and put in some onion flakes. I turn on the oven and put the chip nerds(the tiny pieces in the bottom of the potato chip sack that no body wants) on top and heat for about 10 minutes.





I also make a mean stew. Put your stew meat in a roaster pan with a can of Cream of mushroom soup(you can sub a packet of Onion soup mix but you have to add some extra water) put a little water in there to keep it moist. Bake at 325 for about an hour. Then cut up your potatoes, carrotts and onions in about 1 1/2-2'; pieces and throw in the pan add some more water if it is gettin at all dry put the lid on the roaster now and bake another hour. Fork the veggies to see when they are done. This can also be done in the crock pot for 4 hours on high or 8 hours on low.

8-12 drumsticks or thighs


40z of button mushrooms


6oz shallots(but i use normal onions)


2tsp thyme


2 stock cubes


2tblspoons tom puree


i tsp english mustard


1/12 pts water


2tblspoons flour mxed with a little water


4 garlic cloves crushed





brown the chicken and put into casserole dish


fry the onions and mushrooms for 5 mins then add the garlic, water, stock, puree, mustard, and thyme


bring to the boil and add the flour to thicken


pour over chicken and cook on 180 for 90 mins


serve with yummy stuff like mash and broccoli and carrots

Corned beef hash. Just mashed potato with corned beef mashed in. Baked beans to accompany.
Here's a good one Buy freezer burritos or you can make your own (it doesn't matter and the price is the same) Put them in a pan, mix sour cream and salsa together and pour over them. Grade cheese on the top. Then put in the oven, on whatever temp. the burritos call for, and cook for about forty five minutes. Stick a fork in them, if it is hot they are done, if it is cold they are not. Easiest meal I know how to make, and I do not like salsa but I love this. Enjoy!

Mom's Homemade Coleslaw


1/2 head cabbage, core removed, shredded


1 carrot, shredded


1 cup mayonnaise (Duke's, Kraft, etc.)


1 packet sweet-n-low (or to taste) (1 pkt. is equal to 2 tsp. sugar)


2 tbsp. water, milk, or evaporated milk





In bowl combine mayonnaise, sweet-n-low and water. Mix well. Pour over cabbage and carrot in large bowl. Mix well and chill.











Salmon Patties


1 can salmon, bones removed


1 egg, beaten


1/4 onion, minced


1/2 sleeve saltines, crushed fine


1/2 tsp seasoning salt, garlic salt or cajun seasoning





In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.














Campfire Stew


1 tbsp. butter


1 lb. beef stew meat


1 tbsp. flour salt and pepper


1 large onion, chopped


2 stalks celery, sliced


4 large potatoes, peeled and cubed


1/2 bag baby carrots


1 container button mushrooms, sliced


1 small can tomato paste


1 gallon water





Heat heavy bottomed pot until very hot. Season flour with salt and pepper, dip stew meat into flour, covering well. Melt butter in pot, add meat and brown well on all sides. Removed meat from pan, add onion and celery. Cover and let sweat 2-3 minutes. Add tomato paste and about a cup of water, scrape brown bits from bottom of pan. Return meat to pan, add potatoes and carrots. Add enough water to cover vegetables plus an inch. Cover and let stew simmer until potatoes are done, adding water as needed to keep from scorching. Ten minutes before serving, add mushrooms and allow stew to come to a boil. Cover and allow mushrooms to cook. Serve.








Beef Stroganoff Casserole


1lb. hamburger (or ground turkey works as well)


1 pkg. egg noodles or other noodle


1 can sliced mushrooms, drained


1/2 onion, minced


1/2 tsp. minced garlic (about 1 clove)


1 cube beef boullion


1/3 cup water


1 can cream of mushroom soup


1 1/2 tsp. Worcestershire sauce


1 cup sour cream


1 cup shredded swiss cheese





In boiling water, cook noodles according to directions. Brown hamburger, drain fat, add the boullion and water, adding onion and garlic to soften. Add soup to meat mixture, mix well as it warms and thins. Add mushrooms, cooked noodles, worcestershire sauce and sour cream. Mix well and pour into casserole dish. Top with swiss cheese and bake 30 minutes or until cheese is bubbly.





CHICKEN WITH CUCUMBERS


2 tbsp. olive oil


1 tbsp butter


3 chicken breasts


1 large cucumber


1/2 an onion, sliced thin


1/2 tsp. ground cumin


1/2 tsp. ground mustard


2 cloves garlic, minced


1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)


3 tbsp. sour cream





Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.








TUNA NOODLE CASSEROLE


1 1lb. bag egg noodles


2 tbsp. butter


2 cans water packed tuna, do not drain


1 can cream of mushroom or cream of celery soup


1/2 cup sour cream





Boil noodles according to directions, drain. Add butter, tuna, soup and sour cream, mix well. Store leftovers in freezer.








Chicken and Rice Soup


2 cans Hormel Chunk Chicken or Chunk Turkey


1/2 cup dry rice


2 chicken boullion cubes


8 cups water


1/2 onion, diced


2 carrots, diced


2 stalks celery, sliced


1 can mushroom pieces and stems, drained





Combine all ingredients in heavy-bottomed pot or in slowcooker. Cook until rice is cooked through about 30 minutes on stove or 3-4hrs on high or 6-8 hours on low in crockpot. Freeze leftovers.


























DELI STYLE POTATO SALAD


8-10 large potatoes


half of a medium onion, diced


2 tbsp. sweet pickle relish (or dill relish)


1/4 cup celery, sliced thin


1 1/2 cups miracle whip


2 tbsp. prepared mustard


1/2 tsp. celery seed


sugar, salt and pepper to taste





Peel potatoes and place in a large pot of boiling water. Cook until tender, drain and refrigerate until chilled. Chop coarsely. In large bowl combine miracle whip, mustard, celery seed, sugar, salt and pepper. Reserve 1/4 cup of dressing. Add onion and potatoes to dressing. Mix well and refrigerate overnight. If salad is too dry, add 2 tbsp. of water to reserved dressing and mix into salad to loosen. Add salt and pepper to taste.














EGG SALAD


6 eggs


3/4 cup-1 cup mayonnaise or miracle whip


1 tbsp. sweet pickle relish


1/4 onion, minced


2 tsp. prepared yellow mustard


1 stalk celery sliced very thin


Salt and pepper to taste





Bring saucepan of water to boil. Boil eggs 8-10 minutes, remove from heat and allow to cool 5 minutes.Remove from hot water and peel under running water, making sure to remove all of the shell. In bowl, mash the eggs, add onion, relish and celery. Mix in mustard and mayonnaise. Place in fridge for 1-2 hours to allow flavors to mingle. Add salt and pepper to taste before using.

















Mom's Potato Soup


8-10 large potatoes, peeled and diced


1 large onion, diced


4 stalks celery sliced


Water


6 cups milk


Salt and pepper to taste





In large pot, combine potatoes, onion and celery. Cover with water and simmer 1 hour or until veggies are tender. Add milk and heat through (do not boil!). Salt and pepper to taste.

Why not buy a slow cooker - you can buy the cheapest of ingredients and while you are at work they turn into something amazing!





Italian Tomato soup. Onions, tinned toms, chicken or beef stock, basil, garlic - add rice or pasta for the last hour or so of cooking. Serve with nice bread.





Stew: Any cut of cheap meat, root veggies and potatoes - just fry the meat - dusted in flour with the onions and garlic, put into crockpot, add chopped veggies, potatos and stock.





Chicken: Whole chicken cooked in the crockpot. No meat is wasted as it falls off the bone, and you can use the remaining liquid to make a fantastic soup later.





Failing that, other tried and tested (and cheap) recipes are home made lasagne (dont use bought sauces though - make your own) spag bol (ditto) and traditional family meals such as shepherd pie or what about curry?
