how about pasta with a sauce , you can buy lots of different ones , stir fry { rice with veg meat thrown in } I buy chicken breast from tesco, { 2 or 3 in a pack, bout 2-50 } I slice them up either put them in the stir fry, or coat them in batter, deep fry them till crispy n golden, they are a great favourte, use mince to make burgers or rissoles,
Grandma's Shepherds Pie
INGREDIENTS:
* 1 pound ground beef, browned
* 1 or 2 cans corn, drained
* 5 or 6 potatoes, peeled, boiled, and mashed with milk and butter
PREPARATION:
Put the meat in the bottom of a casserole dish or Dutch oven. Add corn on top of meat. Add mashed potatoes on top, making sure the potatoes touch the sides of the dish all around. Bake 1 hour at 350.
Well spaghetti is cheap. Hamburger helper is hella easy and pretty cheap. when we are running low on money we get rice a roni and put hamburger in it with a can veggies on the side. its filling and cheap.
Besides the obvious and what some other people have said ( Hamburger helper, pasta, spaghetti, etc. ) Maybe buy some veggies and some kind of meat ( chicken, beef, steak, anything ) And you can just throw all them in a pan, add some oil, and you have an instant stir-fry dinner. Or, if you dont even want to cook, ramen noodle soup is super cheap and easy to make. Or, you could buy some bread and PB%26amp;J is always a popular and cheap thing not to mention cereal. For your 2 year old son, Maybe grab some animal crackers and crushed fruits? You can avoid expensive 'name-brand' baby food iteams like specialy shaped crackers or puffs, and find them for cheaper in the regular food aisles.
Tinned beans (not baked beans but Borlotti, Butter, Canalini, Kidney Beans etc) and tinned lentils make a quick healthy and filling meal. I put them with tinned tomatoes,onions, chilli and what ever veggies i have carrots, courgettes, peppers, mushrooms etc cut into small chunks and put in all in one pan and simmer it till veggies are cooked. Serve with rice or tortilla wraps or pitta breads and salad or just as is. If you want too you could put small chunks of meat in or if you don't like chilli put bbq sauce in or even just have as is. I make my own sauces and that saves a fortune as canned tomatoes are dirt cheap-as are onions and garlic. Canned mixed pulses are brill for just 'throwing in' to recipes and tomato puree, condensed soups and decent stock cubes are a god-send.
We always have chilli powder, curry powder, all purpose seasoning, a basil plant, mixed herbs, mustard powder, cumin etc in the cupboard. If you buy curry powder, cream coconut etc from what might be considered a more ethnic shop you'll find the prices ridiculously cheap-and a kg bag of seasoning lasts ages!
Basic basic tomato sauce.
Throw 2 cans of plum toms in a pan with a chopped onion, 2 cloves of garlic(chopped), and a generous squirt of puree. Add in some mixed herbs and fresh basil. Season with salt and pepper to taste. Cook until reduces down to a sauce consistency-about 15 mins %26amp; serve with pasta.
If you're doing spag bol then cook the minced beef off first and then add in tomatoes etc-cook again for 20 mins or so.
Tuna pasta-cook the pasta, add a little butter, salt and pepper and a tin (or two) of tuna chunks. Stir well and serve. You can add lime/chilli/hot sauce whatever you have in the cupboard to make it more interesting.
Burgers.
Throw 2 beaten eggs a lb of minced beef and a finely chopped onion into a bowl and once well mixed shape into burgers. Cook in a griddle/frying pan (no need for oil). We add garlic/chilli powder/curry powder/herbs for different variations. You can even blend canned, mixed pulses and add into the mix for sneaky veg.
Pasta bake is easy too. Part boil the pasta and put in an oven-type dish and add two cans of condensed chicken and mushroom/wine soup and one can of water. Throw in chopped onion, garlic and mixed herbs. Stir, cover and bung in oven for half an hour on about gas 5. You can add chicken, tuna, veg or whatever to this to liven it up.
I always buy whole chickens and remove the breast etc myself, two large fresh whole chickens are 拢5-that's 4 breast, 4 legs and 4wings and 4 fresh breast are usually 拢5.99!
I do roast chicken with peppers, onions, garlic, all purpose, madras powder and carrots all thrown in and covered-slow roast is best-and just serve with coconut rice %26amp; peas.
Adding creamed coconut (from a solid bar) to rice makes it really tasty and cow peas are really cheap (about 拢1.50 for 2/3kg) from the right sort of shop) and they send the rice purple too.
Obviously these are just the quickest but a tray baked veg is brill-cumin, onion, garlic and loads of root vegetables (chop 'em, throw into deep baking tray,add cumin, a little oil, cover and bake for 1hr(ish) on gas 5.
Most of these recipes are basic but add whatever you like to pep them up-with 2 under 2 I have to be quick on prep-even for a long cooking time, lol!

How about a Simple Cheese and Onion Pie?
INGREDIENTS
2 (9 inch) refrigerated pie crusts
5 sweet onions, sliced
8 ounces sharp Cheddar cheese
freshly ground pepper
1/4 cup milk
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Place one pie crust into a deep-dish pie pan. Layer the bottom with half of the onions and half of the cheese. Season to taste with pepper. Layer with the remaining onions and cheese; season with pepper. Pour milk over the pie filling. Place the remaining pie crust on top of the filling. Make small holes in the crust to allow steam to escape.
Bake in preheated oven for 40 to 45 minutes. Remove, and let cool 15 minutes before serving.
Easy Weeknight Meatball Hash

Ingredients:
1 lb. (0.5 kg) ground beef
1/2 c. (119 ml) - 3/4 c. (178 ml) bread crumbs
2 eggs
1/4 c. (59 ml) plus 1/2 c. (119 ml) milk
2 Tbsp. (30 ml) olive oil
2 - 3 c. (0.7 L) potatoes
1 14oz. can beef broth
1/4 c. (59 ml) flour
Directions:
This is an easy weeknight on-a-shoestring meal that comes together fast with a minimum of dishes! Devised during The Christmas Without a Kitchen.
Defrost the ground beef in the microwave, if necessary.
When defrosted, place beef into a medium sized bowl. Add bread crumbs, eggs, and 1/4 c. (59 ml) milk. Take off your rings and combine the mixture with your hands. (It really skeeves me when my rings get gunky.) Once all the bread crumbs are worked in, start making small meatballs: think ping-pong balls or smaller.
Place the meatballs into an electric skillet. Spray it with nonstick if it needs it. Turn the skillet to medium to medium high heat to brown the meatballs. Use a spatula to turn them to brown evenly, or just lift up the skillet pan and shake it to roll them around a bit.
While the meatballs are browning, cut the potatoes into bite-sized pieces. If you're pressed for time, use new potatoes so you don't have to spend time peeling. If you've got baking potatoes, peel them before cutting them.
Add the potatoes to the pan with the olive oil.
When the meatballs are browned and the potatoes a little bit browned, shake the flour over the skillet. Stir to coat the meatballs and potatoes with flour. When there are no more lumps of flour, add the broth.
Cover the skillet and simmer 10 min. Add 1/2 c. (119 ml) milk and stir in. The broth should have formed a gravy. Cover and continue to cook if the potatoes are not yet fork tender. (How soon this will be done depends on how small you cut the potatoes; little bites cook faster, of course.)
(If you have an audience of fussy kids, try serving this with a fancy toothpick for eating the meatballs.)
Serve with a vegetable and dinner's done!
Cherokee Pie
Budget Dinner Recipes
Ingredients:
1 Tbsp. (15 ml) olive oil
1 pound (0.5 kg) ground beef
3/4 cup (178 ml) chopped onion
1/8 tsp. (0.5 ml) thyme
1 bay leaf
1 can cream of mushroom soup
1 pound (0.5 kg) can stewed tomatoes
1 cup (0.2 L) uncooked instant rice
green olives and sliced American cheese
Directions:
Saute' onion in oil. Brown meat in sauteed onion. Add thyme, bay leaf, soup, tomatoes and rice. Pour into a 9x13 baking pan.
Cut cheese diagonally into triangles and place on top. Add sliced olives. Bake at 350 degrees F for 25 to 30 minutes. Let stand 10 minutes before serving.
Pauper's Beef Stroganoff

Ingredients: Metric Units
1 lb. (0.5 kg) stew beef
1/2 c. (119 ml) flour
1 Tbsp. (15 ml) paprika
2 Tbsp. (30 ml) vegetable oil
1 small onion, sliced (optional)
1 c. (0.2 L) milk
1 c. (0.2 L) beef broth (or 1 c. (0.2 L) prepared beef boullion)
1 small can sliced mushrooms, drained (optional)
2 Tbsp. (30 ml) vinegar
Salt and pepper to taste
Directions:
Cut stew beef into bite-sized pieces.
In a medium bowl, combine flour and paprika. Toss beef in flour.
In an electric skillet, heat oil. Add onion (if you're using it - my kids aren't fans) and saute until softened. Add beef to skillet. Brown beef.
When beef is browned on all sides (no more red peeking through the flour coating), Slowly stir in the beef broth. (If you don't have a can of beef broth in your larder, make a cup of beef boullion.) Stir in milk. Simmer. Add mushrooms here if you choose.
Allow to simmer for ten minutes, or until sauce is thickened. Add vinegar, and salt and pepper to taste. (Authentic stroganoff would have you remove the dish from the heat and stir in a whole heap of sour cream, so that's the idea - a little creaminess, a little hint of tartness.)
Serve over noodles. Or with rice or potatoes.

Taco Soup
1 Pound Hamburger (Minced Beef)鈥?Browned %26amp; Drained
1 Pack Taco Seasoning
1 Can Ro-tel Tomatoes (has jalapeno in it)
(can is the size of a Campbell鈥檚 soup can)
1 Can Dark Red Kidney Beans
1 Can Corn 鈥?Whole Kernel
1 Can of Water
Mix together %26amp; cook until it looks/smells done - although everything is already cooked - so you COULD eat it as soon as it gets hot. You can also put it in a crockpot/slow cooker.
(After you make it with the recipe one time to see what it is like - the next time you can also add carrots, peas, white beans, pinto beans, potatoes - just any vegetable you like best.)
After you put it in your bowl 鈥?taste it, it is great that way and less fattening 鈥?then put a big blob of sour cream in it and mix it up 鈥?then taste it again.
Garnish with black olives, cheese, onions, chives 鈥?whatever makes you happy.
I multiply the recipe (using less meat and more corn - just a personal preference) and freeze containers of it to pop in the microwave to thaw and heat later.

Chicken/Turkey Pot Pie
As many cans of Cream of Chicken Soup as you want to fill up whatever size pan you want to make it in.
Add leftover cut up chicken/turkey.
Frozen green peas.
Add dry minced onion flakes 鈥?to taste.
Add rosemary 鈥?crushed up 鈥?to taste.
Optional: As many cans of Veg-All or frozen vegetables as you think it needs.
Mix together and either put in a baking pan or keep in the fridge overnight so the flavors blend better.
Spread it in a baking pan 鈥?I use the rectangular ones.
You can then use frozen biscuits/canned biscuits or mix up biscuits.
If you use the frozen/canned 鈥?just place them around on top and bake it in the oven until the biscuits get done.
If you mix up biscuits, just spread the dough out on top of it and bake it that way. These are the Southern USA biscuits - not sweet - I will add an easy recipe at the end of this recipe. You can also use puff pastry from your frozen food section at the supermarket.
(You can even heat this stuff in a saucepan and then put it in a casserole dish and put leftover biscuits on top of it.)
Light %26amp; Fluffy Biscuits
1-1/2 Cups Self Rising Flour
Stir in 8 Ounces Whipping Cream (Not Heavy Cream)
just until the flour gets wet.
Just dump it out on some flour and pat them out to about half an inch thickness and cut them out with a round cutter.
Bake 400 - 450 until brown.
fry 1 onion in butter and add a tin of corned beef till in goes slightly soft. Put into a dish and add 6 whisked eggs, salt and pepper.Might need a touch of milk if it doesnt fill the whole dish.bake in oven for about 40 mins or until you feel it firm on top. Great with a bit of cheese on top for the last few mins and a good squirt of ketchup on the side.
