This is a recipe of 'Pav Bhaji'....one pot Indian meal and can be spiced up or down to taste...it is a favorite with everyone who tried it...
Ingredients:
Potatoes 鈥?3 cups, diced small
Cauliflower 鈥?2 cups, finely chopped
Frozen Green Peas 鈥?1 cup
Carrots 鈥?陆 cup, diced small
Salt 鈥?1 tsp (to taste)
Haldi(Turmeric) 鈥?录 tsp
Water 鈥?2 cups
Oil 鈥?1 Tbsp
Butter 鈥?1 Tbsp
Jeera (Cumin Seeds) 鈥?陆 tsp
Hing (Asofoetida) 鈥?pinch (optional)
Red Chili Powder 鈥?录 tsp (to taste)
Onion 鈥?1 medium, finely chopped
Garlic 鈥?2 tsp, minced
Ginger 鈥?2 tsp, minced
Tomato 鈥?1 medium, chopped
Tomato Sauce 鈥?陆 cup (1/2 of 8 oz. can)
Pav Bhaji Masala 鈥?2 tsp (to taste) available at any India store
Dhania Powder 鈥?1 tsp
Lemon Juice 鈥?陆 tsp (to taste)
Cilantro 鈥?5 sprigs, chopped (for garnishing)
Method:
In a pressure cooker, add Potatoes, Cauliflower, Green Peas, Carrots, Salt, Haldi and Water 鈥?Mix well.
Pressure cook for 1 whistle and remove pressure after 2 minutes (To remove pressure, hold cooker under cold running water in sink). or Microwave(less water) till the veges are cooked....
Heat Oil and Butter in a non-stick pan.
Add Jeera and allow it to sputter.
Add Hing and Red Chili Powder.
Add Onions, Garlic and Ginger 鈥?stir well.
Cook until Oil starts to separate.
Add Tomatoes and Tomato Sauce and mix well.
Cook until Oil starts to separate again.
Add Pav Bhaji Masala and Dhania Powder 鈥?mix well and cook for 1 minute.
Add Vegetables and lightly mash.
Add Lemon Juice and adjust Salt/Chili Powder/Pav Bhaji Masala.
Cook for 5 minutes.
Garnish with Cilantro.
Tips:
Serve with toasted hamburger buns or potato rolls.
Sprinkle some finely chopped onions on the bhaji when serving.

Tumeric 1/2 Tsp.
Cumin Powder 2 Tsp.
Coriander Powder 2 Tsp.
Red Chilli Powder 2 tsp.
Garam Masala 1 Tsp.
Cilantro Few sprigs for Garnishing.
Oil 1 Tbsp.
Method :
Seperate the florets from Cauliflower. Wash %26amp; drain.
Cut Potatoes into Chunks.
Heat Oil in a Pan , add Onions %26amp; fry till translucent.
Add ginger, garlic Paste, stir, Mix in Potatoes , cover to cook.
When the Potatoes are half done , add the flowrets,
tumeric %26amp; salt. Cover to Cook. Open afer a few minutes,
add all the dry powders %26amp; mix. Garnish with Cilantro leaves
%26amp; Serve hot with Breads, Rice, Rotis or as a side dish.
Go on the internet and type indian recipes. Indian food uses a lot spice and the dishes are mostly vegetarian. Plus they're really easy to make and cheap.

Take a bag or fresh califlower and cut into big chucks and a skillet with oil add 1 onion chopped, 2 cloves garlic minced, red pepper flakes and califlower and saute about 5 minutes. Then add one can of vegetable stock and 2 cans of stewed tomatos let cook about 20 minutes and serve over pasta it is very good add as much red pepper flakes as you like spicey. You can also do this same recipe with broccoli. I serve it over spagetti with bread
cheap vegies would have to be frozen.....you can boil the vegies with salt, drain, mix with butter and spices, sprinkle some garlic salt and eat hot with what ever you are eating.
Or you can heat some oil, add some chopped garlic give a stir and add your vegies, salt, peppers and cook till vegies are done

You can boil, drain, and eat em with cheese sauce spiced up with whatever you like.
