Cheap recipes! Tell me some...?

My husband and I just bought a house and we move in this weekend. I need some cheap recipes now that I have a mortgage payment. I have two kids to feed who are kinda picky. My husband is italian, so pasta is good.





Any ideas??Cheap recipes! Tell me some...?
Here are a few ideas, and a few recipes.





Perfect tuna Casserole:


( you would need to double this recipe):





Measure out 2/3 cup of macoroni noodle and cook according to directions. Drain.





In casserole dish, add tuna, 1/4 cup mile, can of Campbell's cream of mushroom soup, 1 1/2 cup frozen peas, and the cooked noodles. Stir and salt and pepper to taste.





Cook 30 minutes on 350 degrees, uncovered. If you want, you can then top with bread crumbs and cook another 5 minutes.








Hamburger Tator Tot Casserole:





Brown 1 1/2 to 2 lbs ground beef,and 1 onion (diced). Salt and pepper to taste. Drain. Mix with 1 can campbell's cream of mushrrom soup, 1 can french style green beans (drained). Put in casserole dish. Top with single layer of tator tots. Cook uncovered at 350 degrees for 30 - 40 minutes (TILL TOTS ARE CRISP).








Here's a sausage stew recipe I make in the crockpot, which is quite yummy:





This crockpot sausage stew is made with Italian sausage, potatoes, garlic and onions, tomatoes, and seasonings.


INGREDIENTS:


2 to 3 medium potatoes, peeled, cubed


1 tablespoon cooking oil


1 to 1 1/2 pounds Italian sausages


1 large clove garlic, minced


1/2 cup chopped onion


1 can (15 ounces) stewed tomatoes


2 cups chicken broth


1 can (6 ounces) tomato paste


1 1/2 teaspoons dried oregano


1/2 teaspoon salt, or to taste


1/4 teaspoon pepper


2 medium green bell peppers, seeded, chopped


PREPARATION:


Lightly grease or spray slow cooker; place potatoes in bottom of pot.


In a large skillet, heat oil over medium heat. Add sausage links and brown. Slice links into 1-inch pieces and transfer to slow cooker.





Add garlic and onion. In a separate bowl, combine tomatoes, chicken broth, tomato paste, oregano, salt, and pepper; stir to blend. Pour mixture over the sausages in crockpot. Cover and cook on LOW setting 8 to 10 hours, until potatoes are tender. Add bell pepper about 1 hour before serving. (I add it at the beginning)


Serve in bowls with garlic bread.











Then there are eggs, which are cheap and go along way. Not to mention hamburger helper...which you can add shredded cheese and cooking wine to, boosting the flavor.

No prepared foods. Shop the edges of the store, where you find produce, dairy, bread, all the basics. Beans, lentils, dried legumes of all sorts with rice, tortillas, pasta, polenta. Fruits and vegetables in season- if you have a farmer's market nearby, they will be cheaper and fresher. Keep meats to a minimum, and buy family pack sizes, break them down, and freeze them. Extend meats by making soups and stews. Get creative with new cuisines. Italian is good, but so is Indian, Chinese stir fry, Mexican, and Creole red beans and rice.





Make your own Frijoles de Olla- stewed pinto beans


soak beans, drain, cover with water, simmer with an onion, a couple of cloves of garlic, a can of diced tomatoes(opt) some cumin and oregano (also optional) all day, or if you have a crock pot, start the evening before on low. You will will have delicious beans that can be frozen for other days. Things to do with them:


1.Serve as is with some grated cheese and /or chopped green onions/cilantro sprinkled on top with heated flour or corn tortillas, and either corn or a simple salad.


2. pour a little oil in a frying pan. Heat over medium heat. pour in beans, mash with potato masher or back of a large spoon. Fry until hot. You've just made your own refried beans. use them for burritos, with flour tortillas, chopped lettuce, roma tomatoes, onions, grated cheese and salsa.


3. Heat a can of enchillada sauce. Dip corn tortillas in sauce, fold into quarters on each person's plate. sprinkle with cheese, onions...top with some of your beans.


4. Brown a pound of hamburger with a chopped onion. add some of your beans, a couple tablespoons of Chili Powder, a tsp or two of cumin, salt and pepper, a can of tomato sauce, and simmer for at least an hour. Chile con Carne. For a treat, poach an egg in it.





Along the same lines, brown a pound of hamburger, with a chopped onion and diced potatoes until everything is well browned. Salt and pepper to taste, serve in a flour tortilla with any topping you like.





Make your own salsa. In blender or food processor, add 2 garlic cloves, buzz, then a large onion, a can of green chilies, a can of diced tomatoes, a bunch of cilantro, the juice of a lime or lemon, buzz. Finally, add one or two chopped fresh tomatoes. You can add more or less chili for heat- such as serranos or jalepenos if you like. Play with this recipe until you find your family' s favorite blend. You can add a little cumin and or oregano, too.





Dal- Indian lentils. wash 1 1/2 cups lentils well. add 4 cups water.(you can add a tsp of turmeric here). simmer until they fall apart. Heat two tblsp. oil in a small pan.over med. heat. add a little red chili if you want it hot, a tspor two of cumin, a tsp ground coriander, and a half tsp ginger. Heat for a minute or two. You could substitute a tblsp or two of curry powder. be sure not to burn the spices. Pour oil into the lentils, add salt to taste, serve with whole wheat tortillas, yogurt, sliced cucumbers and fruit.





Italian meat sauce- brown an onion with a lb of hamburger. add any of the following in any combination- diced canned tomatoes, tomato paste, tomato sauce, tomato puree, whole canned tomatoes that you have sliced. With the thinner tomato products, just simmer longer, until you have the texture you want. In cheap cooking you use what's on sale and what's on hand. Flavor with Italian seasoning or a combination of oregano, rosemary, thyme, marjorem, fennel seed- whatever you have that sounds good . A grated carrot gives it a little sweetness and thickness. You can add mushrooms, chopped bell peppers if you like. Simmer as long as possible. Its edible after a half hour, but the longer you cook it, the better it gets. Serve over any kind of pasta or over polenta, which is basicly cornmeal mush.





The idea is to use simple ingredients imaginatively. You can feed your family on practically nothing this way. There isn't time or space for all the recipes (with amounts) that I have- If you are interested in more ideas, e-mail me.
My favorite is simple egg drop soup.





Bring a can of chicken broth with a couple dashes of soy in it to a rolling boil.





Beat the heck out of one egg per can of broth. Feel free to put a little pepper in the egg, but you won't need any salt.





Slowly add the egg to the boiling broth. The harder it's boiling and the more you can avoid pouring into already cooked egg, the fluffier the egg will be in the soup.

Congrats on the house! :) I know I love rice crispies! That's cheap and easy. Just buy one bag of marsh mellow and melt it in a pot, put a stick of butter, then poor it onto a box of rice crispies! YAY! It's really good, ur kids will love it. And sometimes i buy a box of macoroni and i just put it in some water with chicken broothe. Then I fry up some spam, and eat it like that. It's good and super duper cheap for a meal. Of course, this gets very tiresome. Congrats again. :)

I love cheap recipes and luv to cook...so here's some...jiffy mix pizza dough in the box its like 50cents and you can put anything on it. also Velveeta block and any pasta and u can add frozen veggies to it. and tofu it mixes with anything and tastes like egg whites and is healthy.(use in place of meat in pasta) its like a dollar. vegetarian split pea soup in bean section, use dry peas and add onions and stuff. water. make a soup. my grandma also makes a killer chicken and rice dish, with cream of mushroom soup, white rice and chicken and bakes it. put chicken and cooked rice In casserole dish and pour like 2 cans of cream of mushroom over it and bake add green onions on top. also top ram-en with eggs in it.

Deciding to have a mortage than eat properly.....I think there are more problems than just wondering what to eat that's cheap. But in all fairness, to answer your question. Learn to love oatmeal, morning / noon and night......but, you will need electricity to cook by....unless you have a fireplace.

    Course 1 - tossed salad with some color thrown in (bell peppers, carrots, etc.)





    Course 2 - spaghetti with meat sauce (a little colorful and very cheap to make in bulk)





    Course 3 - sugar cookies colored up with different bright frosting colors

    Totally great, do ahead appetizer:


    Crabbies! If you've never had these, you don't know what your missing. Everybody RAVES about these and they can be done way ahead of time!





    1 can of crab meet, same size as Tuna can


    1 (5-ounce) jar Cheddar-horseradish spread (recommended: Kraft Old English)


    2 tablespoons mayonnaise


    1 teaspoon garlic powder


    1/2 cup butter (1 stick), softened


    Dash hot sauce or cayenne pepper


    6 English Muffins











    In a large bowl, combine crab, cheese spread, mayonnaise, garlic powder, butter and hot sauce. Divide mixture evenly over each English Muffin half. Put on cookie sheet and freeze for an hour. Cut the rounds into quarters and bake now or freeze in ziplock bag until you want them.





    Bake at 425 until topping is heated through and golden brown on top, about 10 to 15 minutes.





    Enjoy!
    1-you can do salad but instead of the normal croutons make your own, use color coloring to change the colors.





    2- chicken parm. or Lasagna- and bread sticks.





    3- fruit salad or just simple dessert like cake





    but if it is candy land, you can leave bowls of candy out and scatter some candy on the tables. Leave some mint out too since I am sure breathe will be funky and some high schools do kiss!

    BBQ Cups








    3/4 lb. hamburger meat (I buy the lean - $1.75)


    1/2 cup BBQ sauce ($.30 - if even that)


    2 tlbs. brown sugar (pennies)


    1 tlbs. minced onions (pennies)


    1 can Pillsbury biscuits ($.75)


    3/4 cup shredded cheddar cheese





    Brown beef, drain. Add bbq sauce, brown sugar and onion. Place individual biscuits into muffin pan - ungreased, press them out all around each muffin pocket. Put meat mixture into the biscuits and topwith cheese. Bake at 400 degrees for 10-15 minutes














    Pasta Bake (serves 6 generously)





    One 16 oz bag chunky dry pasta (rigatoni, penne, etc).


    One 28 oz jar pasta sauce of your choice


    Water


    1/2 lb package Brown and Serve sausage, crumbled by hand


    2 cups shredded mozzarella (whole milk works best)





    In a 13 x 9 inch baking pan mix the pasta, sauce, one sauce jar full of water and the sausage.


    Cover tightly with aluminum foil and bake in a 425 degree oven for 30 minutes. Stir well, recover


    and bake 10 minutes. Remove foil, sprinkle with cheese and bake until cheese melts.





    Great for getting rid of assorted leftovers. You can add whatever you like to this and it














    Tuna Patties:





    2 cans tuna, drained


    1 egg


    8 crackers, crushed


    1 tsp Worcestershire or soy sauce


    dash garlic powder, salt %26amp; pepper























    Mix all ingredients until combined. This should be just sturdy enough to make a patty-they will be a bit moist, but not falling apart. If too wet to hold a patty, add a couple more crackers. If too dry, add a dash of soy or w. sauce. This should make 4-6 patties. In a large skillet, heat enough oil to cover bottom of pan. (I don't substitute the oil with cooking spray because it takes the outer crunch away) When oil is hot, place patties in skillet and cook on each side until golden. Just a couple of minutes on each side. Drain on paper towels. You can eat this on a bun like a burger, or just as you would a meat entre'. I like mine best without the bun with a little ketchup on the side for dipping. YUMMY!




















    Taco Squares





    Ingredients:


    1-1.5 c Bisquick ( recipe for bisquick under Make it Yourself )


    1 lb ground beef


    1 c sour cream


    1/2 to 1 c mayo


    shredded cheddar -amount variable, I use about 1 cup


    ketchup


    garlic and onion powder to taste


    preheat oven to 350


    1. Mix Bisquick with water to the consistancy of chewed bubble gum.


    2. Spread (with wet hands) over bottom and sides of a casserole dish. The size of dish is pretty flexable, usually something pretty deap.


    3. Season meat with the garlic and onion powder, brown and drain.


    4. Spread meat over bottom of dish.


    5. Drizzle ketchup over meat (some people use chopped tomatoes instead)


    6. Mix sour cream, mayo and a little shredded cheddar.


    7. Spread over meat and cover generouly with shredded cheddar.


    8. Bake at 350 for 30-45 minutes, or until crust is brown.


    *Allow five minutes to cool before serving.














    Pizza Burgers


    1 lb gr. beef


    1 jar any kind pizza sauce


    1 pkg. mozzarella cheese


    1 8 count hamburger buns


    1) Preheat oven to 350 degrees.


    2) Separate buns in half and place on baking pan, heat for 5 minutes.


    3) Brown gr. beef and drain, add pizza sauce.


    4) Spoon gr. beef onto buns, and top with mozzarella cheese.


    5) Bake for 10 minute or until cheese is melted.


    Makes 16 pizza burgers.


    This is a great last minute meal that the kids will love

















    . Quick and Easy Supper Ideas!





    What to do on those nights when the cupboards are almost bare and payday is 2 days away?





    Here are some quick and easy supper ideas that use ingredients you probably always have on hand.





    1. An old stand-by at our house is simply to have breakfast for supper! Sometimes we have pancakes and sausage. I make the pancakes from baking mix which is something I always keep handy. You just add milk. Other times, it's scrambled eggs, toast and bacon.





    2. My family enjoys ';Little Pizzas'; made from English muffins. Just split English muffins and arrange on a cookie sheet. Top with tomato sauce and sprinkle with Italian seasoning. Then just add whatever toppings you have on hand. Sometimes we add pepperoni slices, sometimes browned ground beef or sausage. Sprinkle on chopped onions or whatever is your family's favorite. Top with shredded cheese and put in 375 degree oven till warmed through and cheese is melted.





    English muffins are inexpensive and keep well in the freezer.





    3. Every now and then we have ';Baked Potato Night'; at our house. I bake one large potato for each person and then round up a variety of toppings. Some things we like are chili, sour cream, broccoli, bacon bits, chopped onions, shredded cheese. Everyone can fix his own just the way he likes it and it's a meal in itself.





    4. A very quick supper is grilled cheese sandwiches and vegetableor tomato soup. It's nutritious, inexpensive, and tasty. Need I say more?





    5. Here's a recipe the children can help with. My children loved these when they were small and they enjoyed being able to help make them.





    Oven Baked Hot Dogs





    Lay 8 slices of bread on cookie sheet. Place a slice of cheese on top of each slice. Put 1 wiener diagonally on each slice. Pull corners of bread up over sides of wiener. Secure with toothpicks. Brush each ';hot dog'; with melted butter. Place in 400 degree oven till browned and cheese is melted.





    6. Nachos are another super-fast supper idea. Place a pile of tortilla chips in a microwaveable shallow dish. Pour chili over top, add shredded cheese and microwave till warm. Top with sour cream, if desired.





    7. Sloppy joes are another family pleaser. I try to keep buns on hand in the freezer. If you have no buns handy, sloppy joe sandwiches work,too! To go with the sloppy joes, cut potatoes into 4 wedges each. Place in baking dish with skins down. Brush with melted butter and sprinkle with seasoned salt. Bake at 400 degrees for about 45 minutes or until tender.





    8. If you are ready for something different for supper or lunch, try this recipe for ';Pepperoni Pie';.





    In bottom of 9-inch pie plate, combine an 8-oz. package of shredded mozarella cheese, and about 1/2 cup of diced pepperoni. In a medium bowl, beat 5 eggs and 3/4 cup milk until well-blended. Pour over mixture in pie plate. Bake for 25 minutes or until knife inserted in center comes out clean. Add a salad and some bread and you have a delicious, light meal.





    9. I always try to keep ground beef in the freezer in one-pound packages. Here is one of my staple recipes using ground beef.





    Western Casserole





    Brown a pound of ground beef. Drain off fat. Add 1 can of chili beans and 1 can of Spanish rice. Stir over medium heat until warm. Pour into microwaveable serving dish and top with shredded cheese. Heat in microwave until cheese is melted.





    Easy, easy, and inexpensive, too.





    10. Lastly, something we do at our house every couple of weeks is have ';Leftover Night';. Seems like almost every night, there is just a little bit of supper left over. Just enough for maybe one person. I put these servings in freezer containers and store till I have several different bits of main dishes. Then I get them all out and everyone has their choice of what they have for supper! I usually add salad and make hot rolls and everyone is happy!





    Serve any of the above meals on your good dishes, set the table with real napkins, and a pretty centerpiece. Your meal will be *so* special and only you will know you ';did it on a budget';.Cheap cheap recipes?
    Vegetable Soup.


    1kg Brisket Bones.


    3 Celery stems diced.


    3 Medium carrots diced.


    1 Large onion diced.


    1 Packet soup mix (split peas etc).


    Additional vegetables


    In a 10l stock pot brown the Brisket Bones in 2t cooking oil, turning often.


    When thoroughly brown, remove and pour off fat,


    Add 2t cooking oil and add onion, celery and carrot and saut茅 for several minutes, stirring from time to time.


    Add a jug of boiling water and the soup mix and stir


    Add Brisket bones and more hot water and bring to a boil.


    Reduce heat to a gentle simmer and leave for 90 minutes stirring from time to time.


    After an hour remove the bones and set aside to cool.


    Skim off any fat on the surface and add more vegetables. Peas, beans, corn etc. (pasta spirals, elbow bow ties etc could be added, at this stage.


    Season to taste with S %26amp; P etc and bring back up to heat.


    Remove the meat from the bones, cut into bites sized pieces and return to pot.





    Steak Stew.


    Stewing Steak, Shin, Brisket and other less tender cuts can be used. Brown bite sized seasoned pieces a few at a time in some oil in a fry pan and transfer to a slow cooker, heavy based pot or casserole dish.


    Add a little more oil from time to time as necessary and then fry off some onions, garlic and add mixed herbs and stock or water.


    Stir well to get all the flavourful bits from the meat of the pan and pour over the pieces and cover.


    Cook on low for as long as possible. (About 60 minutes per 500gm)
    Ten Minute Dinner





    1 Pound ground beef


    1 large onion, chopped


    * 1 can (10 3/4 ounces) cream of mushroom soup, undiluted*


    *1 can ( 10 3/4 ounces) cream of chicken soup, undiluted*


    1 can (15 ounces) mixed vegetables, drained


    1 can (5 ounces) chow mein noodles





    Brown beef and onion; add both soups, mixed vegetables and 3/4 can of chow mein noodles. Pour into casserole dish. Top with remaining chow mein noodles. Bake at 400 degrees F. for 10 minutes or until hot.





    NOTE: *Golden Mushroom with Sliced Mushrooms Soup can be substituted for the Cream of Mushroom soup OR Chicken Rice soup can be substituted for the Cream of Chicken soup.*





    *THIS 10 Minute casserole is GOOD! GOOD! GOOD!*
    Caraway seed Soup





    Brown equal ammont of flour and Margerine (1 stick margerine and 1/2 c flour.


    Add 1 T caraway seed


    Add water slowly stirring together Use enough Water that when you bring to boil and


    Add 4oz thin egg noodles it is still soupy


    Cook several minutes


    then Carefully break 6 to 8 eggs into soup try not to break yolks.


    Simmer until noodles soft and eggs are cooked


    Add aproximatly 1 t vinegar (any kind) to taste


    Salt and pepper to taste.





    Serve with toast triangles
    Bean and cheese Burritos, soups with lentles, or dried beans and cheaper cuts of meat are all good choices.





    Army SOS Creamed Ground Beef

    1 pound ground beef


    1/4 cup all-purpose flour


    1 cube beef bouillon


    3/4 teaspoon salt


    1 pinch ground black pepper


    2 1/4 cups milk


    1/4 teaspoon Worcestershire sauce





    -= Instructions =-


    Brown beef in a large skillet over medium high heat. Stir in flour, bouillon, salt and pepper. Saute all together for about 5 minutes or until flour is absorbed. Gradually stir in milk and Worcestershire sauce. Bring all to a simmer, stirring constantly. Cook until thickened, about 5 to 10 minutes. Serve hot!





    A.1.庐 Meatloaf

    Serving Size: 8


    -= Ingredients =-


    1 can (8 oz) tomato sauce ; divided


    2 lb. ground beef


    1 medium onion ; chopped


    1 cup fresh bread crumbs


    1/3 cup A.1. Original Steak Sauce


    2 eggs ; beaten


    1/2 tsp. ground black pepper





    -= Instructions =-


    PREHEAT oven to 350掳F. Reserve 1/2 can tomato sauce. Mix remaining tomato sauce, meat, onion, bread crumbs, steak sauce, eggs and pepper; mix well.





    PRESS mixture into 9x5-inch loaf pan.





    BAKE 50 minutes; pour off fat. Top with reserved 1/2 can tomato sauce; bake an additional 10 minutes.











    Chicken Tortilla Soup





    This soup is quick to make, flavorful, and filling! Serve with warm corn bread or tortillas. This also freezes well. Garnish with chopped fresh avocado, Monterey Jack cheese, crushed tortilla chips, or green onion

    2 chicken breast ; cooked and cut into bite-sized pieces


    crushed ; tortilla chips


    sliced ; avocado


    shredded ; Monterey Jack cheese


    chopped ; green onions

    In a medium stock pot, heat oil over medium heat. Saute onion and garlic in oil until soft. Stir in chili powder, oregano, tomatoes, broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.


    Stir in corn, hominy, chiles, beans, cilantro, and chicken. Simmer for 10 minutes.


    Ladle soup into individual serving bowls, and top with crushed tortilla chips, avocado slices, cheese, and chopped green onion.
    Mexican Meat Loaf


    2 lbs ground beef


    2 cups crushed corn or tortilla chips


    1 cup shredded cheddar cheese


    2/3 cup salsa


    2 eggs beaten


    4 tablespoons taco seasoning





    1. combine all in a large bowl; mix well


    2. shape meat mixture and place in a slow cooker . cover. cook on low for 8-10 hours








    for a glaze:


    mix 1/2 cup ketchup, 2 tablespoons brown sugar a 1 teaspoon dry mustard. Spread over meat loaf. cook on high for 15 minutes.
    Kluski noodles,green Peppers,onions and Brown and Serve MAPLE sausages. Cook noodles. Saute the peppers and onions till tender.. Pan fry the peppers,onions and sausages.Then mix in the noodles. serve Make sure you use Maple sausages!
    Louisiana Red beans and rice.

    Just pour hot water in a bowl, simmer 1-2 package of noodle with the things come with it. wait for 1 min or so. you got the world most delicious self cook fast food. If you want exotic, add some instant salad found in store,. or open a can or Tuna, Salmon whatever you prefer, mix with it. :)
    If you are going to school, you need nutritious food. Instead of wanting to go quick and easy, why don't you consider making big batches of pasta sauce or hearty stews and freeze them in smaller portions ready to use. It will be cheaper in the long run and better for you. Plan ahead, spend a day cooking and you'll be set for a month !!! Good luck with your schooling !

    Ingredients:





    60 ml Curd


    3 tbsp Ghee


    2 Bay leaves


    125 ml Water


    1 tsp Chilli powder


    1 tsp Vegetable Oil


    陆 tsp Garam Masala


    Salt acording to taste


    180 gms Carrot, sliced


    250 ml Coconut cream


    300 gms Onions, sliced


    150 green Beans, halved


    2 pods of Garlic, crushed


    2 tsp finely grated Ginger


    4 Cardamom pods bruised


    300 gms Cauliflower florets


    120 gms sliced baby Brinjal


    2 tbsp chopped Mint leaves


    录 tsp cracked Black Pepper


    400 gms Potatoes, chopped


    1 tsp ground Coriander seeds








    Method:


    Combine curd, garlic, ginger, salt, pepper and spices in small bowl; stand 15 minutes.


    Heat ghee and oil together in large pan.


    Cook onions stirring until onions are golden brown.


    Add bay leaves, potatoes, carrot, cauliflower and brinjal; cook stirring 5 minutes.


    Add curd mixture, water and cream; simmer covered for about 15 minutes or until potatoes are just tender.


    Add beans; simmer, uncovered further 5 minutes or until beans are just tender. Just before serving, sprinkle with mint leaves.

    1 8 ounce package cream cheese softened


    1 small jar of green olives, diced fine


    1 tablespoon olive juice


    1 tablespoon milk


    7 or 8 stalks celery (maybe more) cut into 2 inch chunks





    Mix everything really good but the celery.


    ';Stuff'; the celery with mixture. These are good as soon as your making them or refrigerated.








    Croissants:





    1 package Aloutte Cheese, I like garlic flavor


    1 package Pillsbury Croissant Rolls





    Unroll them, separate them, add some cheese, roll them up and bake them according to the direction, maybe 5 minutes longer.





    Vegetarian Chili:


    2 cans black beans with juice


    1 can rotel


    1 green and 1 red pepper diced


    2 jalapenos


    water


    1 red onion diced


    6 cloves of garlic, minced


    1 can of chili beans


    1 tablespoon (or more or less) chili powder, cumin, garlic powder, onion powder, paprika











    Add oil to a large pot, add garlic and veggies and onion, saute for 10 minutes, add everything else and simmer for a couple of hours. Use as much water as you think you need, and as it cooks you may have to a little amounts at a time. You can also put this out in a bowl, and have nacho topping surrounding it and people can make their own nacho plates.

    1/2 cup Chick-pea flour (original recipe said could sub

    1/4 teaspoon chili powder


    pinch tumeric


    1/2 teaspoon cumin seeds, crushed


    1/2 teaspoon coriander seeds, crushed


    1-2 cilantro leaves, chopped (optional)


    1 oz. zucchini


    1 oz. eggplant


    2 oz onion





    Directions:





    Sift flour and baking powder into small mixing bowl, add all spices and cilantro. Add 1/3 cup water and mix well, making a smooth batter. Let stand 15 minutes. WSH, DRY AND SLICE ZUCCHINNI, eggplant and onion into fine rings. Just before you are ready to cook, add to chickpea batter, coating them well. The original recipe would have you use a pam sprayed pan, or a bit of oil, but I found out that you could spoon out little pancakes of this stuff onto a nonstick baking sheet, and broil it a few minutes, til brown, flip and do the other side. They get nice and crispy (ok, not deep fried) but not bad. Pretty good, actually.





    Un-Beef Satay with Thai Peanut Sauce





    Ingredients (use vegan versions):





    1 bunch fresh cilantro


    1/4 cup Braggs Liquid Aminos


    6 cloves fresh garlic


    1 package seitan (wheat gluten)


    1/3 cup peanut butter


    1/4 teaspoon cayenne pepper


    2 teaspoon ground ginger (fresh if possible)


    1/2 cup sesame oil


    1 can coconut milk


    1 cup water


    1 teaspoon sugar in the raw


    1 lime





    Directions:





    Its good to marinade your seitan the night before you prepare this meal. For the marinade- Take 3 cloves of garlic, crush and mince. Finely chop cilantro. Mix garlic, liquid aminos, 1/2 chopped cilantro, water and 1 teaspoon of ginger. Cut seitan into small chunks then add to mixture and chill.





    O.k. its the day of the meal. Heat the sesame oil in a skillet, and add drained seitan. Fry until slightly crispy, set aside and allow to cool slightly.





    The Sauce- Crush and mince remaining garlic. Mix peanut butter, ginger, garlic, remaining cilantro, coconut milk, cayenne pepper, sugar, juice from half a lime. Mix well and simmer. After stirring for 3 to 5 min. Remove from heat.





    AND FINALLY. Now it is time to skewer your seitan. Skewer as you will, as many as makes sense. When I served this dish in my restaurant, I served it with coconut jasmine rice with a little bit of ginger. Feel free to be liberal with your fresh herbs. So, serve as an Entree over rice with the peanut dipping sauce or as an appetizer without the rice. Bon appetit!





    Serves: 4 or 5





    Preparation time: 20 min.

    Ingredients (use vegan versions):





    500 grams soya mince


    1/2 litre veg. broth


    1/2 in. piece ginger


    6 cloves garlic


    2 teaspoons Garam Masala / Curry Powder


    1 teaspoon chilli powder


    15 mint leaves


    salt to taste


    oil for frying





    Directions:





    Boil the mince in the broth, till dry. Make a paste of all other ingredients and add to the mince. Mix well. Make into patties of 2 in. diameter and deep fry till golden in color. Serve hot with chutney or tomato ketchup





    Serves: 4

    TVP soaked and then blenderized would resemble the normal mincemeat used I think. Also half a boiled potato can be used as a binder. You could try egg replacer made upto 1 egg, but that may add too much liquid to this. Try a few variations...Enjoy being veggie!

    Heat oven to 375 Combine all ingredients exept cheese in casserole dish;stir to mix and cover; bake for 1 hour or until rice is tender. Uncover, stir and add cheese to top. bake till cheese has melted. Serve with warm totillas or bread sticks and salad. Makes four servings.

    I hear college students on campus eat a lot of ramen noodles they are super cheap. Me, well I'd probably have that with a lot of butter bread. How about a large bottle of Ragu spaghetti sauce and about 3 boxes of noodles (and parmesan cheese). And a bottle of Kraft cheese and a couple of boxes of elbow noodles. You can always add hamburger and hamburger helper to either of those to make them last longer. Hunts makes a good sauce for sloppy joes and all you do is add the hamburger (remember to buy bread or buns). You can always eat a lot of snacks like bagels and cheese, cheezits, etc. How about crackers and put tunafish salad and egg salad on them. Just hard boil a bunch of eggs and mix them with mayo and a little paprika and put that on bread. You can always make a huge 12 ingredient salad and have it for two days. You can make potato salad in a huge bowl and have it for three days. You can open a couple of cans of Campbells stew. When in college you don't need to make a three course meal like you would at home. Somebody could always bring home some donuts or donut holes for snacking. Pizza is expensive. Tacos are expensive. You can buy a couple of fryer chickens and have those for a meal with a side dish, then use what's left for sandwiches. (buy the fryers where you either boil, broil or bake them yourself...if you boil them then you can use the broth for soup and add some potatoes. Potatoes go a long way as far as meals are concerned, they go with everything and even by themself if you're hungry...either white or sweet potatoes. You can bake a yellow cake in a long pan and put some icing on it and eat for a day or two. Rice cakes are good too for snacking. Remember to supplement with vitamins, and look forward to eating back home with your family for the holidays and bring food back with you.





    I had a good chuckle about the long winded recipes people who answered gave you....what they missed is that you're ON A BUDGET. You couldn't possibly afford any meals with a lot of ingredients if you're on a budget. Probably too your schedules won't be the same and instead of eating together you'll just be grabbing food from the frig while you study.
    Look for a book called, ';Where's Mom now that I need her?'; by Betty Rae Frandsen. It's on amazon...Written for students on a budget. Decent cheap recipes that require minimum tools and cooking skills, and lots of other practical tips for surviving away from home...

    Toasty Chicken Salad Sandwiches


    1/2 Cup Cooked, cubed chicken (use canned as a substitute)


    1/2 cup celery slices


    2 teaspoon minced onion (substitute dried onions in case you cannot afford fesh)


    2 teaspoon lemon juice (buy the plastic lemon at grocery store)


    1/3 cup mayonnaise


    1/4 teaspoon paprika


    bread slices


    butter or margarine





    Combine chicken celery onion lemon juice mayonnaise and paprika. spread butter on top; top bread with a scoop of salad and spread to cover butter. Bake on cookie sheet at 400 degrees for 12-15 minutes. Makes 2

    My girls used ramen noodles alot. You can cook them and add chicken to them and some vegtables. you can make a cream sauce buy using the packet of seasoning and adding milk and a few slices of cheese. What about bagged salad mix and grilled chicken breast. You can do alot with canned biscuit, like mini pizza's with spagetti sauce and some lunch meat. Pizza pockets.
    Meal One:





    Chicken Salad:





    Cook some chicken breats, saute bake fry any kind you like. Cut into strips, serve over caesar salad and about a tablespoon of italian dressing.





    Meal Two:





    Stuffed Bells:


    Get 2 green bell peppers. Roast in the oven at 350 until a little charcoaled and tender. Take out the pepper and chop of the tope. Take out the seeds. In a pan, brown some ground beef for seasonings, add salt, pepper, and diced onions. Add tomatoe sauce to beef. Stuff the bell peppers and top with shredded cheese. Serve with salad.





    Meal 3:





    Roast Dinner:





    If you have a crock pot. Through in some potatoes, carrots, celery, about 1/4 cup beef broth (the roast will make her own juice). Season the roast with roast seasoning.





    Desert:


    Skinny cow ice cream sandwiches. Or Slim-a-Bear sandwiches. These are the ice cream sandwiches with low sugar. Enjoy!

    3 sticks of butter (3/4 pound)


    3 cups sugar


    2/3 cup evaporated milk


    1 7-ounce jar Kraft marshmallow cr猫me


    12 ounce bag semi-sweet chocolate chips


    1 bottle (airline size or nip) Irish Cr猫me


    2 cups walnuts or pecans - optional


    2 8-inch square pans sprayed with non-stick spray





    In a 3 quart sauce pan - preferably enameled cast iron - melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.





    Turn off heat and mix in marshmallow cr猫me. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish cr猫me and nuts, mixing thoroughly.

    dessert you can make an ambrosia salad. All you need is a tub of cool whip a big can of fruit cocktail ( drain the juice) small bag of coconut 2 cups of miniature marshmallows stir all together and chill
    for a snack while im preparing the turkey i fix hamrollups, which consist of slicked cooked ham individualy sliced wipe off excess slime spred on old englsh cheesein a jar add some green onions roll up and chill 2hrs. choppinto bite size add with toothpicks serve. the other i make sausage balls which is jimmy dean hot suasage 2 rolls 1pkg. extra sharp chedder cheese (grated) 2 cups bisquick mix . mix all ingredients and i warn you its messy. make bite size balls cook in oven about 20 min. makes about 70 balls and easy for breakfast and a snackjust warm up .

    Pesto Chicken Florentine





    Get some healthy veggies with your pasta! --combination of chicken, spinach and creamy pesto sauce. Serve with crunchy bread and romaine salad - the best!








    INGREDIENTS


    2 tablespoons olive oil


    2 cloves garlic, finely chopped


    4 skinless, boneless chicken breast halves - cut into strips


    2 cups fresh spinach leaves


    1 (4.5 ounce) package dry Alfredo sauce mix


    4 tablespoons pesto


    1 (8 ounce) package dry penne pasta


    3 tablespoon grated Romano cheese








    DIRECTIONS


    Heat oil in a large skillet over medium high heat. Add garlic, saute for 1 minute; then add chicken and cook for 7 to 8 minutes on each side. When chicken is close to being cooked through (no longer pink inside), add spinach and saute all together for 3 to 4 minutes.


    Meanwhile, prepare Alfredo sauce according to package directions. When finished, stir in 2 tablespoons pesto; set aside.


    In a large pot of salted boiling water, cook pasta for 8 to 10 minutes or until al dente. Rinse under cold water and drain.


    Add chicken/spinach mixture to pasta, then stir in pesto/Alfredo sauce. Mix well, top with cheese and serve

    It is one of my favorites. You don't have to add all the ingredients for many recipes like the one below. I leave out the peppers and use any pasta sauce you like. I buy big basil plant at Trader Joe's for a just a couple of bucks. Using fresh ingredients as much as possible really makes a big difference. =)





    Mozzarella Chicken Sandwich





    Ingredients





    * 1/4 cup (about 2 ounces) sun-dried tomato pesto (such as Classico)


    * 2 tablespoons fat-free mayonnaise


    * 3/4 pound skinless, boneless chicken breasts


    * 1/4 teaspoon pepper


    * 1/8 teaspoon salt


    * 1 teaspoon olive oil


    * 1 (8-ounce) loaf ciabatta


    * 12 large basil leaves


    * 3/4 cup (3 ounces) shredded part-skim mozzarella cheese


    * 1/2 cup sliced bottled roasted red bell peppers


    * 1 large tomato, thinly sliced





    Preparation





    Combine pesto and mayonnaise in a small bowl, stirring to blend.





    Sprinkle chicken with pepper and salt. Heat oil in a large nonstick skillet over medium-high heat. Add chicken, and cook for 3 minutes on each side or until done. Remove chicken to cutting board, and cool slightly. Cut chicken lengthwise into thin slices.





    Preheat broiler.





    Cut ciabatta in half horizontally. Place bread, cut sides up, on a baking sheet. Broil 3 minutes or until lightly browned. Remove bread from pan. Spread pesto mixture evenly over cut sides of bread. Arrange the chicken slices evenly over bottom half. Top chicken evenly with basil leaves, and sprinkle cheese over top. Place bottom half on baking sheet, and broil 2 minutes or until cheese melts. Arrange bell pepper and tomato over cheese, and cover with top half of bread. Cut into 4 equal pieces.

    Hawaiian Chicken





    1/3 c unsweetened pineapple juice


    1/2 c soy sauce


    1/3 sherry wine


    2 cloves minced garlic


    4 boneless, skinless chicken breasts





    Mix all ingredients except chicken. Marinate chicken breasts for 3-4 hours or over night. Grill. Serves 4. The marinade adds no significant calories.





    Broccoli Casserole





    2 packages frozen chopped broccoli


    1 c rice (uncooked)


    1 med onion, chopped


    1/2 stick butter, melted


    1 can cream of mushroom soup


    1 c evaporated milk


    1/2 lb cheese, grated





    Mix together in casserole dish and bake at 350 degrees for 1 hour.





    Southwest Stuffed Potatoes





    4-6 boneless, skinless chicken breasts


    Figaro liquid fajita seasoning


    4 large baking potatoes


    4-6 ounces light cheddar cheese grated


    green chili salsa





    Wash and cube raw chicken breasts. Marinate in fajita seasoning. Bake potatoes 1 hour and 15 minutes at 400 degrees (adjust time for more or fewer potatoes). Spray Pam in a large skillet. Turn heat on high and pan fry chicken, turning often, about 15-20 minutes. Open potatoes, top with chicken, salsa and grated cheese - a meal in itself.





    Oven Fried Potatoes





    3 potatoes, unpeeled


    2 egg whites


    1/2 c grated Parmesan cheese


    1/2 t oregano





    Cut potatoes into wedges, about 8 per potato. Beat egg whites. Mix oregano with Parmesan cheese. Dip potato wedges in egg white, then roll in cheese/oregano mixture. Place on cookie sheet and bake at 375 degrees until browned, about 25-30 minutes.
    This is a easy and less fat way to make fetuccini.





    Ingredients





    Sauce;


    3 Tbsp butter


    3 Tbsp flour


    2 cups of milk


    Salt and pepper for seasoning





    Fetuccini or linguini noodles


    Grilled chinken pieces or shrimp





    Optional: Parmesan, sun dried tomatoes





    1) In a medium saucepan, melt butter at a medium temperture.


    2) Stir in the flour until it becomes a think paste. (never stop stirring or else it will stick!)


    3) Add milk gradually while stirring. Add salt, pepper as desired.


    4) Continue stirring until sauce thickens.


    5) Pour over cooked noodles.


    6) Toss some chicken or shrimp on pasta.


    7) You can garnish your pasta with Parmesan or/and sun-dried tomatoes.

    1 cup (250 mL) of dried beans (mung beans, chickpeas, or kidney beans)


    1 head lettuce, shredded

    3 tbsp (45 mL) mustard or Italian salad dressing

    Soak and cook 1 cup of dried beans.


    Just 1 cup of dried beans turns into 2-3 cups of cooked beans (depending on the bean).


    Mix beans with choice of dressing or mustard.

    Rotini with Veggies and Hummus Sauce





    3 cups (750 mL) whole wheat rotini pasta


    2 cups (500 mL) homemade authentic or low fat hummus

    2 tomatoes, diced


    1 zucchini, diced


    1 tbsp (15 mL) olive oil


    1 tbsp (15 mL) dried basil


    pinch of cayenne pepper


    Total Cost: $5.03





    Cook rotini in rapidly boiling water until al dente, then drain.


    Heat olive oil in a saucepan. Add the zucchini and saute over low heat, 1 to 2 minutes.


    Add the tomato, basil, and cayenne. Saute over low heat, 1 minute.


    Add homemade hummus and water. Simmer very gently over low heat, 2 minutes.


    Serve hummus sauce over hot pasta.


    Embellish It: Sprinkle served pasta with a dash of parmesan cheese.

    24oz (700 mL) jar or can of tomato-based pasta sauce, preferably spicy


    1lb (500g) of whole wheat spaghetti (buy in bulk)

    1 medium onion, diced


    2 cups (500mL) green vegetable of choice


    1 tbsp (15 mL) olive oil

    4 large whole wheat tortilla wraps


    1.5 cups (350 mL) of dried chickpeas, kidney beans, or mixed beans


    2 cups (500 mL) spinach


    1 cup (250 mL) broccoli, chopped


    1/4 cup (60 mL) shredded mozzarella


    2 tbsp (30 mL) chili powder spice


    1 tomato, diced


    1 tbsp (15 mL) olive oil


    Total Cost: $5.11





    Soak and cook 1.5 cups of dried beans.


    In a large bowl toss beans, chili powder, tomato, and broccoli.


    On 2 tortillas, add spinach and then evenly distribute bean filling. Sprinkle mozzarella on top. Cover each quesadilla with a second tortilla.


    Place quesadilla in a non-stick skillet prepared with olive oil and cook over medium heat for 3 minutes or until bottom is toasted. Flip over and toast the other side for 3 minutes.


    Remove from heat. Please each quesadilla on a cutting board and cut into wedges.





    Embellish It:


    Add more cheese to make wedges even cheesier!








    Hearty Potato, Chickpea, and Tomato Stew with Basil





    1 tbsp (15 mL) olive oil


    1 medium onion, chopped


    2 medium potatoes, peeled and diced


    1.5 cups (350 mL) of dried chick peas beans


    28 oz (800 mL) can of tomatoes, undrained and coarsely chopped


    2 large cloves garlic, minced


    1/2 tsp (2.5 mL) paprika


    1/2 tsp (2.5 mL) dried basil


    1/2 tsp (2.5 mL) dried oregano


    1 cup (250 mL) water (or vegetable stock)


    salt and pepper


    Total Cost: $5.14





    Soak and cook 1.5 cups of dried chickpeas.


    In a large heavy saucepan, heat oil over medium heat. Cook onion until tender, about 5 minutes.


    Add garlic, paprika, 2 of the canned tomatoes, basil, and oregano. Simmer, stirring often, for 5 minutes.


    Add potatoes and water. Cover and boil for 5 minutes, stirring occasionally. Add chickpeas. Reduce heat and simmer for 5 minutes or until potatoes are tender.


    Add remaining tomatoes and salt and pepper to taste. Heat for 1 minute and then serve.

    2 lbs. ground beef


    1 good sized onion, minced


    2 eggs


    3 stalks celery, diced


    1/2 c. water


    1/2 c. butter


    1/4 tsp. salt (optional)

    American or Mozzarella cheese


    1 box chicken or pork


    Stove Top dressing mix


    2 cans cream of chicken soup


    Mix hamburger, onion, eggs, celery, water, butter, salt, and pepper. Spread in bottom of 9 x 13 inch pan. Spread thin layer of sliced or grated cheese over meat. Then slice thin layer of raw potatoes (I precook mine for 10 minutes). Prepare dressing according to directions and spread on top of potatoes. Pour the soup evenly over entire mixture. Bake 1 hour at 350 degrees, uncovered. Serves 8 to 10.





    **********RANCH STYLE HAMBURGER BEAN PIE


    3-4 (15 oz.) cans ';Ranch Style'; brand beans


    2 lbs. hamburger meat


    1 lg. onion, chopped


    Your favorite cornbread recipe for topping


    Pour the beans into a 9x13 inch baking pan. Fry hamburger and onions until done, seasoning while cooking with salt and pepper. Drain. Mix together with beans in pan.


    Make cornbread batter and spread over top of bean mixture. Bake in 400 degree oven until cornbread is done in the center. Great served with fried potatoes.





    *******CUBE STEAK ROLL-UPS


    8 to 10 cube steaks


    2 pkgs. beef gravy mix


    1 pkg. Stove Top mix


    Mix stuffing mix as directed on package. Spoon stuffing mix on cube steaks, roll up and secure with wooden toothpick. Brown steaks in frying pan. Mix gravy as directed. Pour over browned cube steak roll-ups and simmer for 45 minutes.


    NOTE: Use 2 packages of gravy mix when making 8 to 10 roll-ups. Use your choice of stuffing.





    *********BAKED BEANS AND HAMBURGER


    1 lb. hamburger


    1 c. onions


    2 tsp. salt and pepper


    2 cans pork and beans


    1/2 can tomato soup


    1 tsp. vinegar


    1 tsp. mustard


    1 tsp. Worcestershire sauce


    Brown hamburger and onions. Add other ingredients. Mix, cover, and bake at 325 degrees for 35 minutes.





    ********Meat filled Crescent ring:





    Ingredients:


    2 packages crescent rolls


    1 lb. ground beef


    1 envelope taco seasoning


    1 cup grated cheddar cheese


    shredded lettuce


    chopped tomatoes


    one bunch of green onions, chopped


    1 diced avocado


    1 cup sour cream


    salsa


    Method:


    Brown ground beef and follow taco seasoning directions on back of package.


    Add the cheese and place aside for the time being.


    Unroll the two packages of crescent roll.


    On a cookie sheet, place the crescent roll wedges in a circle, wide side of wedge towards the middle, pointed end towards the outside.


    Place the ground beef on the crescent rolls and wrap the pointed ends of the rolls around the meat mixture, so that it forms a ring.


    Bake at 375 F for approximately 12 minutes.


    When baked remove from oven and place on a large platter.


    On the inside of the ring place lettuce, tomatoes, onions, and avocados.


    Dollop sour cream and salsa over all.


    Cut into wedges and serve warm.

    INGREDIENTS


    2 cups hickory smoke flavored barbeque sauce


    1 (2 liter) bottle cherry cola


    1 cup grape jelly


    1 (4 pound) whole chicken, cut into 6 pieces





    DIRECTIONS


    In a Dutch oven, large enough to hold your chicken, combine the barbeque sauce, 1 liter of cola and grape jelly. Add the chicken and pour in more cola if needed to cover it. Bring to a boil, then simmer over medium-low heat for 1 hour, adding more cola as needed to keep the chicken covered.


    Preheat a grill for medium heat. Remove the chicken from the sauce, and place on the grill.


    Cook, turning frequently for about 20 minutes, just until the skin is crispy. Heat the leftover sauce over high heat and boil for about 10 minutes to serve alongside the chicken.

    2 tbs olive oil


    1 medium onion, sliced


    1 clove minced garlic


    1 1/2 cup fresh mushrooms pieces


    1 package of skinless split chicken breasts, or thighs- about 3-4 breast, or 4-5 thighs


    2 cans Delmonte garlic and onion tomatoes-diced, undrained


    2 cans diced tomatoes, undrained


    1 6 oz can of tomato paste


    3/4 cups dry white wine, or cooking sherry


    1 tsp sugar


    1/2 tsp dried rosemarry


    1/2 tsp dried oregano


    1/2 tsp dried basil


    1/tsp dried thyme


    salt and pepper for taste


    1 tbs parsley


    mozzarella or Parmesan cheese


    1 pkg linguini or thin spaghetti noodles


    Heat oil in a large skillet. Add chicken. Brown well on both sides, about 2-3 mins on each side. Remove and leave drippings.


    Add onions, garlic and mushrooms, saute until vegetables are just tender, about 5 minutes. Return chicken to skillet.


    Meanwhile, mix together in a medium bowl, the diced tomatoes, paste, wine, sugar, salt and seasonings. Pour over chicken and vegetables. Bring to a boil; reduce heat and cover. Simmer on low temperature for 30-35 minutes or until chicken is no longer pink. (if you use a meat thermometer, 170 * for breasts, 180* thighs). Sprinkle the chicken with parsley and cheese.


    Serve over hot cooked noodles. Spinach salad and garlic bread go well as accompaniments.

    1 tub 8 oz refrigerated crescent rolls

    On an ungreased baking sheet, separate dough into four rectangles; seal perforations. Spread 1 tablespoon cream cheese lengthwise down the center of the rectangle. Place ham widthwise over the dough. Arrange chicken in center of each rectangle. Wrap ham around chicken. At each end, pinch the dough together around chicken, forming points.

    i love this salad southwestern chicken salad:


    Grill a chicken breast and cut it up in small strips.


    Mix a can of corn and a can of black beans (i rinse the beans).


    Place some lettuce on the bottom of a plate. Spoon some corn/beans on the lettuce. Place the chicken on top of it. If you have some french onions add those to the plate.


    The dressing is made of 2 tablespoons of ranch dressing and 2 tablespoons of bbq sauce (mix well) and coat your salad. YUMMY!

    Mix together %26amp; cook until it looks/smells done - although everything is already cooked - so you COULD eat it as soon as it gets hot. You can also put it in a crockpot/slow cooker.


    (After you make it with the recipe one time to see what it is like - the next time you can also add carrots, peas, white beans, pinto beans, potatoes - just any vegetable you like best.)


    After you put it in your bowl 鈥?taste it, it is great that way and less fattening 鈥?then put a big blob of sour cream in it and mix it up 鈥?then taste it again.


    Garnish with black olives, cheese, onions, chives 鈥?whatever makes you happy.


    I multiply the recipe (using less meat and more corn - just a personal preference) and freeze containers of it to pop in the microwave to thaw and heat later.

    2 pounds potatoes, such as russet, peeled and cubed


    2 tablespoons sour cream or softened cream cheese


    1 large egg yolk


    1/2 cup cream, for a lighter version substitute vegetable or chicken broth


    Salt and freshly ground black pepper


    1 tablespoon extra-virgin olive oil, 1 turn of the pan


    1 3/4 pounds ground beef or ground lamb


    1 carrot, peeled and chopped


    1 onion, chopped


    2 tablespoons butter


    2 tablespoons all-purpose flour


    1 cup beef stock or broth


    2 teaspoons Worcestershire, eyeball it


    1/2 cup frozen peas, a couple of handfuls


    1 teaspoon sweet paprika


    2 tablespoons chopped fresh parsley leaves





    Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.


    While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.





    Preheat broiler to high. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.
    ******** TX RANCH STUFFED MANICOTTI STUFFING:





    1 lb. lean ground beef


    1 lb. Mozzarella, grated


    1 pt. ricotta (low fat)


    2 scallions, sliced


    2 tbsp. basil


    1 tbsp. salt





    1 lb. manicotti noodles


    Jar of spaghetti sauce


    9 x 13 inch baking dish (or larger dish)





    Brown meat; season with basil and salt. Drain well; let cool. Combine meat, grated Mozzarella, ricotta, scallions. Stuffing should be very heavy. Cook manicotti according to package MINUS 1/3 of the suggested time; manicotti should be a little stiff. Stuff each manicotti. If noodle tears, just press it into stuffing and lay torn side down in pan.


    Pour small amount of sauce in bottom of baking dish. Place stuffed noodles in dish, cover with sauce and crumbled stuffing mix if there is any left over. Bake at 350 degrees for approximately 40 minutes. Freezes and reheats well.

    2 cans chicken breasts, cooked and chopped


    2 c. celery, chopped


    1 c. slivered almonds


    2 cans creamy chicken mushroom soup


    3/4 c. mayonnaise


    4 tbsp. onion


    1 tsp. salt


    1/2 tsp. pepper


    3 hard boiled eggs


    1 lg. chow mein noodles


    Shredded Cheese


    Mix all except noodles. Place 1/2 noodles in bottom of casserole. Add ingredients; top with noodles and Shredded Cheese. Bake at 375 degrees for 30-40 minutes.





    *******CHICKEN, BROCCOLI, AND NOODLE CASSEROLE


    8 oz. (4 c.) cooked egg noodles


    2 c. diced cooked chicken (or turkey)


    2 (10 oz.) pkg. chopped broccoli, cooked and drained


    1 1/2 c. (6 oz.) grated cheddar cheese


    22 oz. thickened chicken broth or diluted cream of chicken soup


    1/2 tsp. salt, dash of pepper


    1 can (3 oz.) French fried onion rings


    Cook noodles as directed on package; drain. Put noodles into 13 x 9 x 2 pan. Put chicken on noodles, then put cooked broccoli on chicken. Top this with half of cheese. Pour chicken broth over this; then add remaining cheese.


    Cover with foil and bake at 350 degrees for 30 minutes. Uncover and top with French fried onion rings. Bake 5 minutes more. Makes 8 servings.





    ************Quick and easy Lasagna





    2 containers (15 oz.ea) ricotta cheese


    2 cups shredded mozzarella cheese (about 8 oz.)


    ½ cup grated Parmesan Cheese


    2 eggs


    2 jars (1lb. 10oz each) Ragu Old World Style


    12 uncooked lasagna noodles





    1. Preheat oven to 375. In bowl, combine ricotta cheese, 1 cup mozzarella cheese, ¼ cup Parmesan cheese and eggs.





    2. In 13x9 inch baking dish, spread 1 cup pasta sauce. Layer 4 uncooked noodles, then 1 cup pasta sauce and ½ of the ricotta cheese mixture; repeat. Top with remaining 4 uncooked noodles and 2 cups pasta sauce.





    3. Cover tightly with aluminum foil and bake 1 hour. Remove foil and sprinkle with remaining cheeses. Bake uncovered an additional 10 minutes. Let stand 10 minutes before serving. Serve with remaining pasta sauce, heated.





    * or use 1 jar (2 lbs. 13 oz..) Ragu Old World Style Pasta Sauce.





    VARIATION: For a twist on classic……. Add 1 lb. ground beef, cooked, to Pasta Sauce.





    NOTE: Recipe can be halved. Bake in an 11x7 inch baking dish 1 hour. Continue as above, omitting last 10 minutes of baking.

    Family Fav., 1/2 pound Ground beef, can of Vegall mixed veges, sm. can Hunt's tomato sauce, seasoned salt and pepper in casserole dish, bake @ 350 about 45 mins. Serve w/ salad.


    Cost: $ 2.25 - $2.50 total.
    The cheapest casserole would be one you make with what you've already got. The basic ingredients in most casseroles are: Pasta, Meat, Vegis, Cheese.





    There is no wrong way to do this, because you can use anything you have on hand. Here's a really basic recipe... It uses macaroni, ground beef, shredded cheese, and mixed vegis.





    Brown the ground beef in a skillet or large sauce pan.





    Cook macaroni until they are almost done, but still firm.





    Combine the macaroni and ground beef in a large pan or in a casserole dish. Mix in the vegetables (allow to thaw first if frozen). Cover with the shredded cheese and then bake until bubbly and hot throughout.





    You really don't even have to bake it. If you used a big enough stock pot you could just keep adding ingredients and allow it to stew for a while on the stove.





    You can substitute everything in this recipe.


    If you don't have beef you can use chicken or pork. (shredded or cubed works best).


    If you don't have macaroni substitute another pasta (orzo, fettuccine, whatever you've got).


    Mixed vegis work, but so would peas, green beans, corn, or pretty much any canned vegetable.


    Cheddar cheese soup can be substituted for shredded cheese. So can Velveeta.
    MILDRED'S EASY CHEAP CASSEROLE





    1 (8 oz.) cheese whiz


    1/2 c. milk


    7 oz. spaghetti, break in thirds cook and drain


    2 tbsp.butter


    10 oz. cooked broccoli


    1 c. chopped chicken or turkey


    1 (4 oz.) can mushrooms, drained


    2 tbsp. chopped pimento


    1/4 tsp. salt


    1/4 tsp. sage





    Combine cheese and milk mix. Toss spaghetti with butter. Combine all ingredients Mix well. Spoon into 2 quart casserole. Cover and bake at 350 degrees for 30 to 35 minutes. Stir well before serving. This is easy cheap and good.

    Cheesy Tater Tot Casserole








    2 pounds of ground beef


    1 bag of tater tots


    1 can of cream of mushroom soup


    1/4cup of milk


    3 cups of Cheddar cheese


    1 small onion


    1 medium casserole dish





    Brown ground beef in a large, dice onion in small pieces and cook with ground beef





    Drain beef and add mushroom soup and milk. Mix well.





    Then layer your tater tots and beef mixture in a buttered dish. put cheese between each layer. and Top with cheese.


    Bake for about 30-45 mins on 350





    You can serve this with sour cream or ketchup





    Its a big hit at my house, the kids and hubby love it!
