Know any tasty and cheap vegetarian recipes?

Cheap=





Spaghetti: Cook the noodles, drain, and put back on stove, dump in some marinara sauce (it's more cost and time effective to by jarred pasta sauce, esp if it's on sale). Mix in to warm up sauce and serve. Super cheap.





Burritos: Heat any kind of beans you like on the stove or in the microwave, and heat tortilla in microwave, fill with beans and whatever else you like, for some nutrients: romaine lettuce, corn, avocado





fried rice: put leftover rice in a ';pammed'; skillet or wok on medium high heat, after a minute or two, add in some frozen peas and carrots (frozen food section for 99cents to $2.00 for a bag), heat up for a minute or two, move rice mixture to outer edges of pan, crack an egg in the middle and cook like a scrambled egg, use your spatula to chop it up into super small pieces. Combine everything, then add as much soy sauce as you want.





Stir fry: frozen mixed veggies with teriyaki or soy sauce on a skillet, over rice.





Lentils are SO cheap and healthy: make a lentil casserole that makes like 4-6 meals for one, like this:


3 cups vegetable broth


戮 cup lentils


陆 cup brown rice


戮 cup onion, chopped


陆 tsp. basil


录 tsp. oregano


录 tsp. thyme


录 tsp. garlic powder


Cheese %26amp;/or fried onion, optional


- Mix everything in casserole dish, and bake covered (lid/foil) at 300 degrees for 1.5 hours. Top with cheese in last twenty minutes.





WITH LENTIL CASSEROLE LEFTOVERS:


Heat leftovers in a skillet, mix in as much taco seasoning as desired, put in hard taco shell top with lettuce and whatever you want=DELICIOUS tacos. (taco seasoning lasts a long time for one person, just fold the bag and keep in your cabinet).





Also, cook lentils as directed on the package and mix with finely chopped onion and sloppy joe sauce=delicious.





Cheap foods=frozen veggies, beans, lentils, pasta, sauce, eggs (egg sandwiches are good, egg salad or fried egg).

Makes 6-8 servings





Ingredients


2 medium onions, coarsely chopped


3 garlic cloves, minced fine or 陆 tsp garlic powder (or more if you love garlic)


戮 cup finely diced green peppers


2 14.5oz cans diced tomatoes, or 1 quart home-canned tomatoes


3 cans of beans 鈥?Kidney, or pinto, or mixture of the two (or whatever you want)


1 can corn, drained


8oz can tomato sauce


录 tsp beaumonde spice, optional ( I don鈥檛 use this)


1 tsp ground cumin


陆 tsp pepper


1 tsp seasoned salt


1-2 TBSP or more chili powder


1 tsp dried basil





Combine all ingredients in slow cooker, cover and cook on low 8-12 hours, or high 5-6 hours.

Simple Spinach Enchiladas





1 cup light sour cream


1 (7 ounce) can green salsa


1 bunch fresh spinach, rinsed and thinly sliced


2 cups shredded Monterey Jack cheese


1 (10 ounce) package corn tortillas





Preheat the oven to 350 degrees F (175 degrees C).


In a small bowl, stir together half of the sour cream and the green salsa. Spread enough to coat the bottom into a 9x13 inch baking dish. On each tortilla, spread a small amount of the salsa and sour cream in the center. Lay a small handful of spinach over that, and sprinkle with Monterey Jack cheese. Roll up, secure with a toothpick and place into the baking dish. When all of the tortillas are in the pan, pour the remaining salsa over the top and sprinkle with the remaining cheese.


Bake for 20 to 25 minutes in the preheated oven, until the enchiladas are browned and heated through.
lol i like never cook either, ive been living on frozen veggie burgers :D


but i figured out something else i could make- tacos!! haha


buy one of those old el paso taco making box things and gimme lean fake meat.


cook the fake meat in a frying pan with the box stuff for a few minutes and then just put it in the taco shells (there are instructions on the box too)
vegetarian rueben


one slice of sprouted grain bread..toasted


mustard


saurkraut piled on


swiss cheese


melt it in oven or microwave..( I dont use microwaves)


add some Spike seasoning or mrs Dash
