Some people go vegetarian because it's cheaper. Peanut butter is cheap, here's a few:
Peanut butter, although high in fat, tastes great with other foods.
Peanut butter and raisins on toasted cinnamon-raisin bread
Peanut butter and sliced bananas (either plain or as a sandwich)
Peanut butter spread on celery and carrots
Beans are cheap, a good source of protein, and good for you:
Vegetarian beans are just like pork-n-beans without any animal products. While this food is high in sodium and added sugar, it can be substantially improved by draining off the added sauce. Dump the entire can in a bowl, add 2 cups of warm water, mix the contents, and drain off the water. Now the beans taste slightly more “fresh.” You need not bother to heat beans (saves time and energy). The warm water which you use to rinse the sauce partially heats the beans. Don't put beans in the microwave because they will explode and create quite a mess. Adding just-cooked rice or noodles to the beans is another way to substantially warm them.
Other products to eat with beans include whole wheat bread (roll a scoop of beans inside a slice of bread), tortillas, corn nachos, and pita bread. For variety, eat other canned beans such as kidney beans, black beans, black-eyed peas, chick peas, and lentils. Black-eyed peas taste exceptionally good with flour tortillas (hot or cold). On the other hand, black beans are best with chips and salsa. Refried beans go well with corn tortillas (these cost only $1 for about 20 tortillas). For additional flavor, place big black olives in the tortillas too. Other vegetables such as tomatoes, lettuce, and green peppers can also be added, as well as salsa.
Lima beans are great, if you like them. Buy frozen lima beans, heat in the microwave in less than two minutes or in boiling water in under five minutes. Add spaghetti sauce over them. The creation tastes similar to spaghetti, but it has a beautiful green color.
Spaghetti in itself can always serve as a quick meal. Buy the cheapest noodles, most often the ones in the largest package. Also purchase whatever spaghetti sauce is on sale, as long as it does not contain meat, cheese or too much fat. My favorite type of sauce is the chunky kind with added zucchini, olives, carrots, or mushrooms. I often add even more vegetables to the sauce to enrich both the texture and nutritional value of this meal. Don't waste time cooking the sauce and washing a separate pan. Instead, heat the sauce by pouring it over the hot noodles. Spaghetti sauce is also good over rice, especially wild rice.
Sandwiches often provide quick meals and allow countless possibilities. Lettuce, cucumber, and tomato sandwiches go well with rye bread and a mustard spread. Tomato and grated carrot sandwiches make another nice combination. If you have some pizza sauce, add it to mushrooms and green peppers on wheat bread. Try pita bread filled with rice, tomatoes, and either ketchup, mustard, or salsa. If you eat cheese, cheese sandwiches (cold as well as grilled) are great. Pretend you're making your favorite cold cut sandwich, use all the fixings you normally would, but use just cheese instead of the bologna or ham slices.
If you eat them, eggs are a great source of protein, and they're really cheap compared to meat. Fried egg sandwiches, omelettes, egg salad, even just a boiled egg as part of a meal is good.

Chickpeas and kidney beans over rice with mustard sauce
Lentils and spinach mixed on bread or a tortilla
Yams and corn blended together
Green beans cooked with croutons
Mixed vegetables with spaghetti sauce wrapped in a tortilla
Diced tomatoes added to wild rice in a pita
Creamed corn (cold) wrapped in sourdough bread, then dipped in salsa
A little orange juice over sliced bananas and coconut
Applesauce mixed with blueberries or strawberries
Not everything is going to be like non-vegetarian food minus the meat. If you can handle the odder combinations, you'll have a healthier diet. Avoiding the tofu burgers and dogs and other veggie specialty foods will save you a lot of money. Good luck!What are some good cheap vegitarion recipes?
Aloo Paratha Recipe
To make a dough, mix in a shallow, flat bowl or pan:
2 1/4 cups Indian whole wheat flour
1/2 teaspoon salt
Add:
about 3/4 cup warm water (enough to make a bread-like dough)
Cover and set aside:
To make the stuffing, boil, peel, and mash:
3 large potatoes (about 3 cups)
Add:
3/4 cup onion, finely chopped
3 Tablespoons fresh coriander leaves (cilantro), finely chopped
1 1/2 Tablespoons cumin/coriander powder
1 1/2 teaspoon salt
3/4 teaspoon garam masala
1/4 teaspoon hot red pepper powder, or to taste
Method I: To form the paratha, make 18 equal-sized balls of dough. Using all-purpose white flour as needed, roll out 2 of the balls into 5'; rounds until about 1/4 inch thick. Place about 2-3 Tablespoons of the filling on one round, and cover with the other. Press gently around the eges, then carefully roll out the paratha until about 1/4'; thick and 6 1/2'; wide altogether.
Method II: You can also form the paratha by dividing the dough into 9 equal parts. Roll out each part until about 10'; wide and 1/4'; thick. Place about 1/4 cup of the filling in the center, and gather the dough circle up around the filling, drawing the dough up to a sealed point at the top. Fold over the point and flatten the dough into a thick patty. Roll out carefully until about 1/4 inch thick and 6 1/2'; wide.
To sauté the paratha, preheat a frying pan on medium-high heat. Add 1 teaspoon oil for the first paratha only. Put in one paratha and paint the top surface with about 1/4 teaspoon oil. Flip and paint the second side. Continue to flip the paratha frequently, pressing with a spatula on any unbrowned areas until browned all over on both sides. Remove from the pan and repeat with the other parathas until all are cooked. Serve topped with ghee or plain yogurt.
