Baked ziti!





Shopping list


Dececco brand ziti/penne/rigatoni


1 Jar favorite tomato sauce


1 Ball fresh whole milk mozzarella


1 disposable large aluminum casserole pan





Parmesan and extra virgin olive oil add flavor but not necessary





Boil Water with a little cheap oil-(veg) other oils are fine too.


When water is boiling add a palmful of salt-kosher salt is best


Add pasta and mix once in awhile


Strain pasta when cooked with just a little bit


Add pasta and tomato sauce back into pasta pot and mix thoroughly.


Add pasta and sauce to aluminum pan


Top with sliced mozzarella cheese (%26amp; parmesan)


(Drizzle cheese with Extra virgin olive oil)





Bake in pre-heated oven on 375 for about 8 minutes-until cheese is melted.


Broil to brown the cheese to your liking.

Boil some angel hair pasta (plain ole spaghetti works, too) and add a chicken boullion cube to the boiling water for more flavor.





Chop up squash, onions, mushrooms and saute. Add seasonings...I like basil, oregano, garlic and celery salt.





I f you can afford it, add chicken, beef or pork to your sauteed vegetables..





Drain the pasta, toss with a little olive oil or butter so it doesn't stick together and place on a plate. Serve the veggies over top of the pasta and add parmesan cheese.





Add a salad and a glass of wine and you've got a meal fit for entertaining.





It's fast, easy and budget conscious.





An alternative to the veggies is sliced black olives, a couple of crumbled slices of bacon (or real bacon bits like the Hormel brand) and a diced tomato. You don't have to cook these just toss it on the pasta.
Huevos Quesadillas





2 tablespoons butter


4 snack-size (6-inch) flour tortillas


2 tablespoons chopped mild green chilies


1/2 cup shredded Monterey Jack cheese


4 fried, poached or scrambled eggs


Salsa for accompaniment


Guacamole for accompaniment


Sour cream for accompaniment





Melt butter over low heat in a skillet large enough to hold 1


tortilla. Lay tortilla in skillet and sprinkle with 1 tablespoon


chilies and 1/4 cup cheese, top with another tortilla. When bottom


tortilla is golden brown, flip and continue to cook until cheese is


melted and other side is golden. Remove quesadilla to warmed oven.


Repeat process.





Place 2 eggs (prepared as you desire) on top of each quesadilla and


top with salsa, guacamole, and sour cream.





Makes 2 servings.
