I have a project in school and I need to know different types of food mainly served in Mexico so that I can make them and serve them to the class. I don't know any recipes though or what to make so does anyone know any recipes that are cheap, easy to make, and taste good?
I'm looking to serve this to about 20 people so it would be helpful if the recipes were things like queso that you could just scoop on a plate, and serve with chips. Thanks in advanced.What are some cheap mexican recipes?
EASY MEXICAN RICE
1 tablespoon of vegetable oil
1 cup of long grain rice
2 1/2 cups cold water
2 tsp. salt
2 tsp. garlic salt or 1 tsp. garlic powder
3/4 cup of tomato sauce
In a skillet heat oil over medium heat. Add rice and cook until lightly browned. Add water and remaining ingredients, bring to a boil.
Cover and simmer until rice is tender.What are some cheap mexican recipes?

cooked spinach,pepper jack cheese, little milk and melt together over low heat

This is the BEST recipe, authentic and super easy. I'll even give it to you in a large portion
Mexican Beans
3 large cans of pinto beans (drained and rinsed)
1 white onion, quartered
4-6 cloves garlic
Enough vegetable broth to BARELY cover beans (important)
1 tsp cumin
1 tsp Mexican chili powder
2/3 tsp Mexican oregano (ground)
Salt and pepper to taste
Put all ingredients in a stock pot, bring to a boil then simmer on low for 30 minutes. Transfer to blender or food processor in batches and blend until smooth. (that is the only semi-difficult part- I use a hand immersion blender- but it is worth it).
I make this all the time (in smaller batches) and everyone is very impressed with it, they are like, ';you made that!? It tastes just like its from a Mexican restaurant.'; And it is super easy.
(usually you can get these spices by the produce in the grocery store in little bags for like 99 cents a piece-- or try Wallgreens they usually have spices for 99 cents a piece, too, though I don't know they'll have Mexican chili powder. You can, if you must, use regular chili powder, but the oregano must be ground oregano, not the Italian leaf style)
